So we figured since we can't afford to go for tapas every night (boohoo) we would attempt to make our own at home! I have attempted Tapas dishes before, such as Paella and Patatas Bravas and there have been disastrous consequences, so we decided to opt for something a little easier this time; Spanish Omelette! This is one of my favourite tapas dishes to eat in Spain, whilst it’s, admittedly, a little simple, I believe it is simply scrummy! I could literally eat a whole one to myself every day and never get bored of it! Just writing this post is really making me crave one actually....

I think cooking as a flat is a really important thing to do, especially when you’re in a foreign country. It’s so easy to sit in your room eating alone when you could be out in your kitchen being sociable! Plus, you save so much money on ingredients when you’re sharing everything and no food gets wasted!

Here's the recipe for our first dish!

Spanish Tortilla

(Serves 6-8 people)

Ingredients:

  • 4 large potatoes (preferably white baking potatoes)
  • 1/2 an onion (again preferably a white onion! )
  • 7 eggs
  • Oil
  • Seasoning

Method:

Peel and chop the potatoes and onion into thin slices and rest to one side. Meanwhile, heat a generous amount of oil in a pan until sizzling. Add the potatoes and onion to the pan and fry until softened. Whilst waiting for the vegetables, beat the eggs in a large bowl and season to taste. Remove the frying pan from the heat and drain the excess oil from the potatoes and onions. Once drained, stir into the egg mixture. Return the frying pan to the hob and add the mixture. Ensure the omelette is thoroughly cooked on one side before attempting to flip it over (ours was very difficult to flip as it was so big)! Continue to cook on the other side.

Serve and Enjoy!

Notes

  1. The potato to egg ratio can be altered to suit your preferences
  2. Extra ingredients, such as cheese, tomatoes, mushrooms etc can be added for extra taste
  3. The larger omelettes are much harder to flip so make sure you're prepared! We flipped ours onto a plate before sliding it back into the pan
  4. Spanish Tortilla is meant to be quite thick, not flat as a pancake so make sure you don't spread the ingredients too thin in the pan

This was an absolutely delicious recipe, it really turned out well, as you can see from our pictures! Spanish Omelette is so easy to reheat, simply pop in the microwave for a few minutes, depending of course of the size of the portion! We had about two slices each and that filled us up, the rest was saved and was perfect when served again with fresh salad or simply as a snack on its own. This recipe was also super easy to follow and the ingredients are so simple it would be quite a good one to use when you’re running low on money (as most students often are! ), or if you want to use up some cupboard ingredients before you go home or simply if you want a low budget meal that’s quick and easy to make. I also took mine into uni for lunch as they have microwaves on site. Literally, the perfect student meal when you’re far away from your mummy’s delicious home made dinners but still want some form of food comfort!
