How to prepare the traditional greek 'Tirokafteri' sauce

Tirokafteri is a Greek dip (sauce) which is the second famous dip after Tzatziki. The translation of the name means ‘spicy cheese’. It is widely consumed in Greece by both young people and the elderly. Generally, Greek people love eating cheese and anything that contains cheese, so tirokafteri, which is made of the famous Greek feta cheese, is an everyday appetizer on almost every table. The taste of tirokafteri is spicy, a little bit salty with a pinch of olive oil. Except from feta cheese, sometimes, it can be combined with other types of soft white cheese (like lefko tiri) or yogurt. From region to region, you can find differences on the preparation method and the ingredients that are being used.

The preparation of tirokafteri is very easy and you can find all the ingredients for this tasty recipe in your kitchen or in the supermarket. You don’t need to spend a lot of money for this recipe and the result will leave you speechless.

The ingredients that you will need are the following:

  • About 250 to 300 gramms of Greek traditional feta cheese;
  • Virgin olive oil (not more than two tablespoons);
  • Vinegar made of grapes (not more than one tablespoon);
  • Two or three green spicy peppers (if you want to make it extra spicy you can use even four of them);
  • One tablespoon of Greek yogurt;
  • One teaspoon of sweet paprika for the decoration;
  • Some black olives for the decoration;
  • A little bit of oregano.

This recipe is not for a specific number of people, because it is a dip and you can change the amount of the ingredients that you are going to use as much as you want.

After you have collected the ingredients, now it’s time for the preparation :

  1. Firstly, you have to cut the feta cheese into small cubes and put it in a bowl full of water. You should leave the feta there to stand for about one hour.
  2. Then, fry with a little bit of oil the peppers and when they are ready cut them into pieces and remove all the seeds.
  3. When the feta cheese cubes are ready, put them inside an electric mixer bowl along with the spicy peppers, the oregano, the tablespoon of yogurt, the olive oil and the vinegar and blend them all together.

  5. When the mix is ready, place it on a plate and put a little bit of paprika and the olives for decoration.

Your fantastic dip is ready to be served now! You can combine it with your meat dishes (especially with souvlaki) and it also fits with fried potatoes, zucchini or even with seafood like octopus and squid.

To feel the taste even more, you can just cut a slice of bread and eat this killing combination without anything else!
