Creamy Courgette Sauce (with potato, carrot and onion)
It was me that said you're not going to be eating just McDonald's and frozen pizzas, no? Eating healthy is important, especially for students, not just to give you energy for studying, but for going out as well.
Here's a really easy recipe that I'm sure everyone will like, even those that don't like veg, and I'm saying this from experience. Have a warm bowl of it on a cold night and then try and tell me you don't like it.
Ingredients
- 2 medium potatoes
- 1 small/medium onion
- 1 large courgette (or 2 medium)
- 1 large carrot (2 small)
- Milk
- Water
- Oil
- Salt
- Pepper
Method
- Chop up all of the ingredients (everything that can be but up of course... I'm so funny)
- Put a large amount of olive oil in a pan and then add all of the chopped up ingredients (the potatoes, carrots, courgette and onion). Leave them for a couple of minutes, stirring occasionally.
- Now add the water and the milk. As you can see, I haven't given you any amounts for these ingredients, why? Because you'll be able to see when you have enough. Add them bit by bit, together. If you add a glass of water, add a glass of milk as well. The liquids should never cover the ingredients completely. As I said, you have to add them little by little, bit by bit.
- When it looks ready, leave it on a medium heat. Don't forget to stir however so that it doesn't stick to the side or the bottom of the pan.
- It usually takes about half an hour, but to give you an idea of what you should be looking for, when you can cut a piece of carrot in half without any effort, take it off the heat.
- This is when you'll need a whisk. Just whisk it all together until it's creamy. There shouldn't be a lump in sight.
- Finally, add the salt and pepper to taste, keep trying it so that it's neither too salty or completely tasteless (it's always better to be tasteless as you can always add more salt, but can't take it away).
Let's Eat!
It's done. You can eat it straight away, save it for the next day (warm it up a bit in the microwave beforehand) or freeze it.
Do whatever you want with it, but it does go well with that BBQ bread you can get in the supermarkets, if not, normal bread is still pretty good.
It will come in handy for those cold winter's evenings.
