Hello, good evening, let me introduce myself. I'm Arielle, a 21 years old young Beninese. Today I'll introduce you to a sesame recipe. I couldn't post quickly for the contest because of the connection. Yes, in Benin, not only you have to pay a lot for a real connection that lasts, they also steal from us. But we're not here for that. Let's start with the recipe.

- Ground sesame

- Salt

- Powdered spices, crushed by hand or by machine: garlic, onion, ginger, pepper, etc. Add all the spices you want, without exaggerating, for a good smell and taste

- Water or Eggs depending on the quality of sesame and your allergies.

Preparation:

1. In a bowl, pour the sesame

Two big handfuls is enough, but you can add more. I didn't measure, because one, here we use it rarely and two, this recipe is to be made according to the convenience of the cook, nothing standard.

For the sesame, I prefer the one that has long seeds without being round, those can hold without using an egg. If you already buy them ground, ask for the real thing, it's a little more expensive. I purchased some last Tuesday on June 6, 2017 for 1700f/kg at the Saint-Michel market in Cotonou. I advise foreigners to bargain well, vendors tend to scam you when you don't bargain well.

So, put the ground sesame in a bowl, add the spices and salt.

2. Add eggs and some water

The number of eggs will depend on the amount of sesame because the mixture should be neither too hard nor too liquid. It should be in between, but a little more on the harder side than liquid.

Stir the mixture with your hand and taste it. Add salt or spices as needed, or if it's perfect go to the next step.

3. Beat or whip the mixture with your hand until it rises a little.

4. Put in the fire

Put a large saucepan in the fire and pour in water, enough to fill half of the pan or a little less if you want to use the water later for soup or sauce for example.

5. Add salt to the water

Wait until the water boils and with your hand, take a quantity of the mixture depending on the size you want the ball to be.

Put this ball in the boiling water. Do the same thing until the entire bowl of mixture is finished.

The balls must float, don't worry if it sinks at first. However, you should worry if it doesn't rise back up.

Tips

1. The egg is needed if you don't have the right kind of sesame. Otherwise, the balls will crumble in the water.

2. Check the balls frequently. When the visible part of the ball (the top part) is darker, turn it around by shaking the pan a little or use a ladle; be careful not to break them.

Wait a while longer. Then, take a ball and break it. If the interior is darker then it isn't cooked yet.

When it's well cooked, remove the pan from the heat, remove the balls from the water and add them to a sauce, rice, on any dish or eat alone.
