I know all of us here (and most likely everybody on Earth) loves lasagna. This is without any doubt one of my favorite things to eat, especially when my mum made them. But on this blog today, I am going to give you the recipe to make lasagna yourself. And not only regular lasagna, but vegetarian lasagna. According to me, this is a great alternative to regular lasagna because it helps you to keep it healthy, and it is honestly as delicious as the original one. I discovered this recipe by talking with some friends and decided to try it right away, and I absolutely loved it!

If you try this recipe and are not really convinced with it in the end, you can always change a little bit and go back to the original by replacing the vegetables by meat! This is a basic and very reliable dish for mostly everybody, so you can be sure to please your friends.

  • 1 eggplant,
  • 1 zucchini,
  • lasagna pasta,
  • ½ cup of chopped onion,
  • 1 can of crushed tomato,
  • 2 cans of tomato paste,
  • 3 tablespoons of chopped parsley,
  • ricotta cheese,

  • sliced mozzarella cheese,
  • 4 cups of grated Parmesan cheese,
  • salt, pepper,
  • dried basil leaves,
  • 1 egg.

    Method to follow:

    1. Mix together the crushed tomatoes and the tomato paste, and add ½ cup of water. Also add the basil leaves, salt, pepper and parsley. Leave it to cook with low heat while continuing the preparation.

    2. Fill a large pot with water (not completely though) and leave it aside while waiting for it to boil. Add a little bit of salt in it.

    3. Cut your eggplant and zucchini in slices. In a separate pan, cook them a little bit (around 5 minutes) with medium fire. Also add the onion after a few minutes, with the heat a little higher to sear it quickly.

    4. Preheat your oven to 190 °C. In a bowl, put together the ricotta cheese with the egg and a little bit of salt.

    5. When you think your pasta is cooked (depending on how you like it), drain them and rinse them with cold water to stop the cooking.

    6. Using a large dish, put one layer of pasta at the bottom. The pasta should cover the whole surface. Put a layer of ricotta cheese and spread it. Top it with mozzarella cheese slices. You can also add a little bit of ricotta cheese on top. Repeat the layers, there should be two or three of them, no more. On top of everything, put the remaining mozzarella slices and some Parmesan cheese.

    7. Bake in oven for 45 minutes, check on them from time to time to make sure they do not burn (the cooking should be perfect for it to be even better! ).

    There it is, your very own vegetarian lasagna! I am pretty sure all of your friends will be surprised of this recipe and delighted that you cooked it for them! The lasagna can also be complemented with a side salad if you want it to be even healthier, but no pressure on that. If you do not like eggplant and zucchini, I guess there are also other vegetables that you can use instead!
