Pasta with tomato, ricotta (soft white Italian cheese) and tuna

I am a pasta lover, I always eat it with any sauce depending on the ingredients that I want or I have in my fridge. If I don’t have my favourite ingredients, I make very strange dishes. For example, one time I mixed several ingredients and, in the end, I obtained a new "recipe", very tasty! It's very simple to cook and it is very delicious. I didn't think that it was going to be so delicious, immediately I changed the idea. I prepare this dish many times because also my grandchildren love it! Try it!

Ingredients for 3 people are shown below.

Ingredients:

  • 300g pasta (fusilli, rigatoni or penne)
  • 500ml tomato sauce
  • 250g fresh ricotta
  • 240g tuna
  • 3 minced cloves of garlic
  • Half onion coarsely chopped
  • Chilli pepper (optional)
  • Cherry tomatoes
  • Fresh basil
  • Parmesan

Step by step:

  1. Fry garlic, onion and chilli pepper in virgin olive oil.
  2. Then add the tuna and cook for 1 to 2 minutes. Now add the tomato sauce and cook for a few minutes, over moderate heat, until you have a thick consistency. Season with salt and pepper.
  3. Meanwhile, cook the pasta in boiling and salted water.
  4. Once ready the sauce, add the ricotta. Stir well to obtain a creamy sauce. Add some cooking water if the sauce is too thick, although in my opinion, the best sauce is very dense.
  5. Drain the pasta and season it with the sauce. Add cherry tomatoes, basil leaves and parmesan for garnish.

Suggestions and Curiosities

When I made this dish the first time, I tried to see if there were other similar recipes on the Internet. Of course, there are a lots of recipes but none of them is the same as mine.

The chili pepper gives a particular taste but is totally optional if you do not like spicy food.

If you haven’t the tomato sauce, you can use fresh tomatoes and fry them with garlic and onion. I’m sure that the result will be delicious.
