Basmati rice with coconut milk and curry

Today we will use special ingredients. Coconut (one of my favorite flavors), curry (I love spicy food) and Basmati rice (my favorite one).

What are we cooking?

It's an Indian recipe made with Basmati rice, coconut milk and curry. You can also prepare the chicken using these ingredients, so pay attention to the preparation part.

Before listing the ingredients and preparation steps for the perfect rice, I would like to say that I prepared the oriental rice (I ran out of Basmati) with coconut milk and I added some onion, some zucchini and some green bean sprouts previously stir-fried. I let everything cool in order to impregnate the rice with coconut milk. The next day I heated it up adding curry.

What was the result? Something out of this world!

So, here are the ingredients for a classic preparation.

Basmati rice with coconut milk and curry

Ingredients

  • 1 tin of coconut milk (I used only half)
  • Basmati rice (you can decide how much of it, I used around 250 gr)
  • 1 onion
  • 1/2 zucchini
  • Green bean sprouts
  • Water
  • 2 spoonful of curry powder
  • Oil

Preparation

  1. Put oil in a pan to stir-fry the onion, zucchini and green bean sprouts. Add water if necessary.
  2. Meanwhile, boil water to prepare the rice, add salt and cook it 'al dente' (low heat).
  3. In another pan put coconut milk and gently heat until boiling, then, almost immediately, add rice.
  4. Cook the rice previously mixed with coconut milk until you get a creamy consistency, then add other ingredients.
  5. In a small pan where you will then add curry and other ingredients put some oil.

Actually, this dish tastes good cold. I refrigerated the rice overnight and I followed the last step the next day (after mixing the rice and curry). You can also add curry powder before, during the preparation. And it is even better if you cook curry with coconut milk in the same pan to create a bittersweet flavor. The result is really nice. You can substitute zucchinis with whatever you prefer, but I think that chicken or shrimp are the best options.

Curiosity

This way you can prepare many Indian dishes because coconut milk and curry are commonly used in their culture. The mixture of these two ingredients could sound weird but this special

touch of sourness is necessary. Otherwise only rice with coconut milk would be too sweet. Moreover, in the picture you can see how the rice matches with coco milk and curry, so you have two possibilities: be creative!
