Vegan apple pie

After a long summer, the autumn season is here giving us an abundance of fresh fruits and vegetables of which I want to take advantage as much and longer as I can. Today I picked up some apples and I filled out the house with the smell of an old good apple pie.

The recipe I am making is totally vegan, not necessarily healthy, but still delicious.

The ingredients that you need are:

  • 1-2 kilograms of apples (works with any kind of apples);
  • 1 cup of sugar + 2 tablespoons;
  • 1 cup of almond milk;
  • 2 cups of mineral water;
  • Half a cup of vegetable oil;
  • 3-4 tablespoons of maple syrup (optional but recommended);
  • Vanilla sugar;
  • Baking powder;
  • Cinnamon;
  • White flour;
  • 1 teaspoon of curcuma;
  • 1 pinch of salt.

The first step is to peel off and grater the apples. In a pan the apples are cooked over a medium high heat with 2 tablespoons of sugar, 3-4 tablespoons of maple syrup and, of course a lot of cinnamon. The apples are cooked until they get soft, brown and are smelling incredibly delicious.

The next step is to prepare the batter. In the meantime the oven has to be preheated. In a large bowl is added the one cup of almond milk and both the white sugar with the vanilla sugar and are mixed together until the sugar has been dissolved. Then, the mineral water is added too alongside with the vegetable oil.

The ingredients are well stir in. The white flour is poured in little by little with the baking powder, the curcuma and the salt. The batter should not be too thin, but rather thick so it will grow.

The baking into the oven:

In a baking tray place a baking paper and then pour half of the entire compositionof the dough in and baked it for about 10 minutes until the batter has started to grow.

Take it out of the oven when it is slightly cooked and spread on the mixture of apples in a consistent layer. Pour the left batter on the apples and put the tray back in the oven for another 20 to 30 minutes or until the top of the pie feels like it has cooked enough.

... and the taste!

And the vegan apple pie is now ready to be portionated and served. The taste is great and the smell I have now in the house creates a chill and confy atmosphere.
