The Bolivian Sonso

Hello to chefs all over the world! Today I want to show you how to prepare a traditional dish from Bolivia. I tried this dish when I went to some wonderful highlands located in the area of Santa Cruz. I still remember the countryside rivers fondly.

When they asked me if I wanted to eat 'sonso' (translates to 'stupid' in English), I was honestly surprised because I hadn't imagined that a dish could be called this. This is because Sonso is an adjective that's given to someone who sounds a bit 'stupid' at times. :) But anyway, the thing is, this tasty dessert is made with yucca (Yucca root is very dense and starchy and is used just like a potato in many delicious dishes worldwide) and cheese and also a few other things thrown in for taste. It is then cooled or baked to give a flavour that takes you to heaven.

This tasty Bolivian dish called Sonso can be accompanied with a cup of tea or coffee, whilst sharing the delicious taste from the highlands with others at the same time.

Here in Italy I have a friend from Bolivia who is studying with me in the University of Rimini and who also taught me how to prepare an incredible finger-licking good recipe. You should try it out, you will enjoy it as much as I did I assure you!

If you live in Europe you will already know that it's not easy to find yucca. Therefore, if you don't know which supermarkets to get it in then you can go to an Asian supermarket where you can find various Latino products. For example, where I live in Rimini there is a small Chinese stand on Gambalunga street where you can get yucca. There are also other products available that are essential ingredients for making a good Latin dish.

Without much further ado, let's start cooking!

Ingredients for the Bolivian Sonso:

  • 2 yuccas
  • 100g cheese
  • A bit of salt
  • A splash of olive oil for frying
  • A bit of milk to give more flavour

How to make the Bolivian Sonso:

  1. The first thing you have to do is wash the yucca. You can, for example, get some in Latino shops if you're in Italy, or otherwise in a Chinese shop that sells foreign products. They usually sell them in units of about 10 portions.
  2. Slice the yuccas and cut them into small pieces as shown in the photo.
  3. After this put the yucca in a pot and cover it with water
  4. You need to wait until the yucca is completely boiled before using a fork to form a soft dough.
  5. After that, pour a bit of milk into a cup with some salt and grated cheese
  6. With clean hands, form small flat round pieces of the dough (as many as you want)

  8. Put a splash of olive oil in a frying pan and begin to fry each piece of dough until it turns a golden colour. It's ready!

Finally take into account that..

It can be accompanied with a cup of tea or coffee for a tasty lunch or breakfast. You are going to try an exquisite Bolivian dish!
