Oatmeal cake

Oatmeal is a trendy food nowadays and it is not surprising because of its benefits and properties.
One of the recipe's ingredient is oatmeal and it provides, for example, a higher amount of minerals and fiber than the wheat flour and also less carbohydrates.
If you don't have flour, you can use oat flakes and blend them in a mixer. It won't be as soft as the flour, but the result is good.
Oat flakes.
Ingredients:
- 400 grams of oatmeal (wholemeal if possible).
- One yoghourt with lemon flavour.
- Six teaspoons of sugar (brown sugar if possible).
- Four teaspoons of olive oil.
- Three eggs.
- One sachet of baking powder.
Brown sugar.
Preparation:
1. First of all, we preheat the oven at 180 ºC. If we don't have a silicone mould, we can use another greased with oil or butter and with a bit of flour (that will facilitate after the demoulding).

2. In an appropriate bowl we put the olive oil, the lemon yoghourt and the sugar. Then we have to whip.
3. We add the eggs one by one in order to integrate and mix them well and whip.
4. Add the baking powder and whip again.

5. We add the flour in a big bowl or salad bowl and also add the whipped mixture. Then mix them with our hands until there is a soft dough.
6. We add the dough in the silicone mould and bake it during thirty minutes more or less (we should insert inside the cake a knife blade in order to make sure that the cake is well cooked. If it is cooked, the blade will be clean).
This cake is really delicious and it is really good to eat for breakfast. Furthermore, it will be soft for a long time. ¡You should try it!
