Italian sponge cake with yogurt

This delicious cake is extremely easy to make yourself!

It’s got a light, fluffy texture, similar to a sponge cake, but with a few key changes which make it even more special.

Ingredients:

  • 12 egg yolks
  • 200g sugar
  • 1 natural yogurt
  • 1 orange
  • 140g self raising flour
  • 6 egg whites
  • butter (for greasing the cake tin)

Method

  1. Pre-heat the oven to 180ºC
  2. Thoroughly mix the yolks with the sugar.
  3. Add the yogurt and pour in the zest of the orange.
  4. Beat egg whites into soft peaks.
  5. Slowly add the flour and beaten egg whites to the yogurt and sugar mix.
  6. Add the batter to a greased cake tin and bake for 35-40 minutes, or until done.
  7. Allow the cake to cool and enjoy!
