Castilla beans with rice and fried fish

Hello to cooks around the world and food lovers! I hope that every one of you is well, on this occasion I want to teach you how to prepare another Creole dish that we have here in Peru. As I am from the coast, I have my family to thank for this influence. We feed ourselves with our little beans with fried fish.

Eating fish is very healthy and nobody can deny eating beans as well. Having them in our diet provides us with a lot of energy to you continue with our studies and conquer every one of our daily tasks.

With no further ado, let's start with the ingredients of this Peruvian dish. Let's eat!

Ingredients for this recipe

  • Castilla beans
  • White rice
  • Garlic
  • Olive oil
  • A tomato - peeled
  • Cumin
  • Sibarita (chilli powder) to add colour
  • Garnished with little chillies or onions and lemon
  • Fish of your choice
  • For the salad: a little carrot, celery, radishes with lemon juice and salt to season

Preparing the beans

  1. The first thing that you should do is soak the beans the day before so they are able to soften. The Castilla beans are a black bean.
  2. Boil the beans in a pan.
  3. Once they are freshly cooked add the diced onion along with the peeled tomato.
  4. Also, add a teaspoon of the garlic for the dressing.
  5. Add a little Sibarita and cumin for the flavor.

Preparing the white rice

  1. The ideal thing to do would be to have a rice cooker, but as I do not have a rice cooker I have to improvise. So, I use a small pan with a little water (the same amount that you are going to use for the rice) and put it on a strong heat so that it boils quickly, whilst doing so, add a little garlic and salt to improve the taste, something that I learnt at home.
  2. You should wash the rice at least three times until the water runs clear using a strainer if you have one. Do this whilst you are waiting for the water to boil with a little oil, garlic and salt.
  3. Once the water has boiled you should add the rice and keep stirring it to ensure that it does not burn. Wait approximately 10 minutes, maximum.
  4. When the rice starts to granulate, use a fork to stir it frequently to make it cook faster.
  5. Once the rice is done, as well as the stew, the plate is practically ready to serve and enrich ourselves with this delicious Peruvian dish. It is a simple dish with a high nutritional value, ideal to fill yourself with energy and keep up with the day to day of studying.

Other points to take into account

Once you have prepared the beans and the rice, you can fry the fish. In this case, I used bonito fish (Sarda chiliensis, the eastern Pacific bonito, is a marine species of bonito), the salad contains vegetables like tomatoes, carrot, celery and radishes, cut into large pieces with a dash of lemon juice (in this case I have only added lemon with a little salt). Let me tell you again that the secret to this recipe is preparing the beans the day before.

This is a very versatile and simple dish, you can make it with whatever salad you like. Sometimes I have it with a fried egg but it depends what you all like, in order to create your own creole dish.
