Vegan snickers: how to?
Who doesn’t like snickers, a sweet and crunchy bomb that gives you energy, but how about a plant based version of it which can be enjoyed by vegan fellows too? Well, my mother found the best recipe that tastes the same as a normal snicker or even better than that and she shared the recipe with me, so I can give it forward to you.
The needed ingredients for baking a vegan snickers
The ingredients that you need are the following:

150 grams of sugar

100 ml of coconut water
-
50 ml of vegetable oil
-
2 packet of vanilla sugar
-
200 grams of minced walnut
-
100 ml of oat milk
-
2 tablespoons of coconut cream
-
1 tablespoon of baking powder
-
200 grams of white flour
Making the dough, the base of the cake
At first, the coconut milk is heated up and mixed with the sugar, the vanilla sugar and stirred until the sugar melts completely. After that, the oat milk is added as well as the minced walnuts, the 2 tablespoons of coconut cream, the baking powder and, in the end, the white flour is poured until the dough becomes perfect, slightly soft.
The dough is baked on a baking tray upholstered with baking paper so it will not get sticky and than put in the oven at a temperature of 180 degrees for approximately 20 to 25 minutes.
Preparing the crunchy caramel cream: the ingredients and the cooking process
The second step is to make the filling cream for which you need the following ingredients:

8 tablespoons of sugar

The coconut cream
-
1 lemon
-
1 packet of vanilla sugar

300 grams of roasted peanuts that can also be salted

Rum essence
-
250 grams of margarine
The coconut cream is mixed with the vanilla sugar and with 2 tablespoons of lemon zest. The sugar is melted in a pan and over it is added margarine, the coconut cream. All of the ingredients are mixed together and the composition is boiled until it becomes a smooth cream. The peanuts are added to this sweet soft cream and stirred continuously until the cream thickens. In the end the rum essence is added to the mixture.
Finishing up the vegan snickers cake
After the peanut cream gets cooled down, is spread all over the baked walnut dough. The snicker is finished up with a glaze of melted vegan chocolate.
If you can resist the temptation, the vegan snicker is perfect for eating when it has completely cooled down. The sweet crunchy treat tastes amazing and you barely can notice the difference between the normal snicker and the vegan version of it. Now, go bake it and share some bites with your colleges or Erasmus students.
