Sri Lankan Christmas Cake

Ingredients

  • 200g butter.
  • 225g sugar.
  • 170g chopped cherries.
  • 225g chopped currants.
  • 225g chopped raisins.
  • 225g chopped sultanas.
  • 50g chopped cashew nuts.
  • 50g mixed peel.
  • One teaspoon of vanilla.
  • Juice from a one orange.
  • 100ml brandy.
  • 4 eggs.
  • 225g all-purpose flour.
  • 1 teaspoon mixed spice (cinnamon).
  • 4 tablespoons of jam according to your preference.

First, you should mix all the dried fruits except the chopped cashew nuts with orange juice and brandy and let it one night to marinate well with the brandy and the taste of all the other fruits.

Then add the butter into a bowl and beat it well, until it turns into creamy. Add sugar and the eggs. Then beat it until sugar dissolve. Add the spices and the flour with vanilla. Mix it well. Thereafter, you can add the marinated fruit mixture and mix it well. In this stage mixing evenly with butter is highly important to have a good texture.

Then you can preheat oven for five to ten mins at 140 centigrade and then bake it for three to four hours until it turns into golden brown and firm to touch. While it is baking, check whether it is perfectly baked or not, by using a toothpick and inserting it to the centre of the cake. If it comes out clean then cake it backed well.

After getting the cake out of the oven, you can decorate it with jam and icing sugar as you wish.
