Spaghetti with Meatballs

How many of you have had homecooked italian meatballs following Italian recipes? I remember the first time I had meatballs cooked by my grandmother. It's safe to say I am addicted. There is nothing like them, in fact yes my mother makes very good meatballs but there's something about italian grandma's cooking that is out of this world. This recipe has been passed down from my grandmother to my mother and now to me. Now for some reason my meatballs never come out as good as hers, and there must be a secret she never told me, but this is the recipe to authentic Italian meatball pasta. Hope you enjoy.

Ingredients for Two people

Pasta

  1. 200g Pasta (Spaghetti or Linguine)

For the Meatballs

  1. 250g Minced Meat
  2. 1 Garlic clove (to be chopped)
  3. Some of the inside of the bread (sorry i am not sure how to call it exactly)
  4. 2 Eggs
  5. Breadcrumbs
  6. Parsley
  7. Parmesan (quite a lot)
  8. Salt, pepper and Olive Oil.

For the Tomato Sauce

  1. Basil
  2. A quarter of an onion
  3. Tin of chopped Tomatoes
  4. Tomato puree

Method

  1. Put a glug of olive oil in a saucepan and add some chopped onion. Cook at a medium-high heat to get the onion sizzling – try not to burn it.
  2. Once the onion is slightly browned add the tin of chopped tomatoes, bring the heat down and cook with the lid on for about 20 minutes.
  3. In a bowl put all the ingredients for the meatballs apart from the breadcrumbs. Mix the mixture well in order to get an amalgamated ball of meat.
  4. Make smaller balls of meat and roll them into breadcrumbs.
  5. Once you have finished and have lots of little meatballs put them in a frying pan which is sizzling with oil. Cook the meatballs in the oil until they are no longer pink in the middle.
  6. Once they are cooked place them on some absorbing kitchen paper to absorb any excess oil.
  7. Fill a saucepan with boiling water and place on the highest heat with a lid.
  8. Place the amount of meatballs you want to eat in with the tomato sauce adding some basil and some tomato puree.
  9. When the water is boiling add some salt and the pasta. It should take usually 10 minutes but double check as overcooked pasta is never too good.
  10. When the pasta is ready drain it in the sink and add to the saucepan with the sauce.
  11. Add a glug of olive oil and salt and pepper to taste.
  12. Add some parmesan to taste.
