Rice noodles with shrimps

Ηola a todos! Once again, we meet! This time we will make a Mediterranean-Asian recipe. This recipe is very different from my traditional cuisine, but I love tasting new flavours and new combinations. At Greece, ingredients are much more expensive than here. So here I have the opportunity to cook things that I love, with less effort and through cooking I can explore new cultures, new horizons from every part of the Earth.

You know, some people travel through painting, some other through singing. When you do something that you love, it makes you forget the time. At that moment you know that you are making something you love with all your soul. I will admit it, the situation in Greece right now is bad, it creates us the feeling that we must not give money or energy to anything else other than our work, we start to be like robots.

Many times, when I find something that I really enjoy spending time on it, in the back of my head I am thinking, better to spend time on something that helps you earn more money because you don't know what may happen tomorrow. But after some time I realized that I will fight for myself, raise a self that you are proud of, not a miserable money machine.

I know, it's weird to read all that stuff when you expect to see "1 chopped onion, 2 tablespoon olive oil", but every recipe, every taste, creates a deep feeling. It tells about the story of its ingredients. Everything that we touch-smell-feel, every day hides a story, don't forget and don't refuse that, only when you decide to see the magic that exists in this world, you will finally find happiness!

Ingredients:

  • 500gr shrimps;
  • 200ml coconut milk-cream;
  • 1/4 pineapple;
  • 2 cloves of garlic;
  • 8 pistachio;
  • 5-6 cherry tomatoes;
  • 2/4 pumpkin;
  • 2 tablespoons coconut oil;
  • 1/3 avocado;
  • 1 package of rice noodles;
  • Some rose wine;
  • Curry, pepper, salt, turmeric;
  • 2 tsp mango pepper sauce.

Step by step:

  1. Clean the shrimps.
  2. Chop the garlic.
  3. Cut 1/4 of pineapple into pieces.
  4. Cut the 2/4 of pumpkin into pieces.
  5. Put 1 tablespoon coconut oil in the pan and leave it to melt.
  6. Put the shrimps inside and leave them until they get a golden colour.
  7. Put the garlic and leave it 1 minute.
  8. Add the pumpkin and then, the pineapple and the cherry tomatoes.
  9. Now it's the time for the wine, let it a couple of minutes to evaporate the alcohol.
  10. Add the avocado and the mango sauce.
  11. Last but not least, put the coconut cream and the spices.
  12. In another pot, put water to boil with salt and when it starts boiling put the noodles for 4 minutes, take them out and strain them. Pour cold water on them.
  13. Mix them with shrimps and leave them for 3-4 minutes.
