Peppers stuffed with minced beef
Today I decided to make some red peppers stuffed with mince for my friends, and honestly they turned out to be delicious. Here's the recipe.
Ingredients (for 4 people):
- 4 red peppers that stand up by themselves
- 500g mince
- 1 large onion
- 4 tablespoons Spanish fried tomato sauce (or substitute with passata)
- Salt
- Pepper
Method:
Cut the tops of the peppers off with a sharp knife so that it can be used as a lid. Remove the seeds and the other inside parts of the pepper without breaking them. Don't forget to wash them.
To prepare the filling, first chop the onion into small pieces and fry it until transparent. Add the mince and season to taste. When the meat is medium done, add the Spanish fried tomato (or passata) and leave it to cook for around 5 minutes. Don't worry if the meat isn't very well done at this point as later it will finish off in the oven.
Fill the peppers, put the tops back on as lids, and place them in a deep-sided baking tray or casserole dish.
Put them in the oven for around 35 minutes at 180ºC, but keep checking to ensure they don't burn. When they look ready, take them out and enjoy!
