Pasta with Pesto

This is one of the easiest but tastiest food hacks. How to make a simple pasta with pesto taste absolutely delicious?! - Add a courgette and cherry tomatoes! This is probably my favorite dish to prepare because it is easy, quick and absolutey amazing. If you have all the kitchen equipment such as a spiralizer then great, if not (like me) then all you need is a potato peeler! Enjoy this recipe!

Ingredients for One person:

  1. 100g Pasta (I used linguine but it is also perfect with smaller pasta such as fusilli or Penne)
  2. 1 medium sized courgette
  3. 1 Garlic clove
  4. 50g of Pesto
  5. A Handful of Cherry Tomatoes (I used a mixture of yellow, red and orange)
  6. Parmesan
  7. Salt, pepper and Olive Oil.

Method:

  1. Fill a saucepan with boiling water and place on the highest heat with a lid.
  2. Put a glug of olive oil in a frying pan with a garlic clove (leave whole). Put this at a low heat, as we do not want the garlic to burn.
  3. Slice the courgette in vertical strips with the potato peeler to make some long, flat strips. (if you have a spiralizer then it will make this process a lot easier).
  4. When the water for the pasta is boiling, add some salt to the water and then add the pasta. Make sure you check the cooking time and set a timer, but approximately pasta takes 10 minutes to cook.
  5. Chop the cherry tomatoes.
  6. . Add the courgette strips to the frying pan.
  7. When the pasta is ready strain it, add it to the frying pan and stir it all together. Add the pesto and the cherry tomatoes to this.
  8. Add a glug of olive oil and salt and pepper to taste.
  9. Add some parmesan to taste.
