Neapolitan recipe: limoncello

What was the first drink I tried when I came to Italy? Of course, limoncello! It is a great drink for guests and gift for friends. My curiosity about the possibility to prepare it on my own gave results!

Ingredients:

  • 10 raw lemons;
  • 300 g twist of lemon;
  • 1 liter alcohol 95 %;
  • 800 g sugar;
  • 1, 2 liters of water.

So to get the liquor of medium strength you should follow proportion of 120% of water and 80% of sugar against alcohol.

Preparation:

  1. Wash lemons very thoroughly, you can use scouring pad for it; dry them well.
  2. Cut off the thin layer of the twist of lemon, for this goal I suggest to use the peeler. Try to cut only the yellow part of the twist, without cutting the white one (it could give a bitter taste to our liquor, we don’t need it).
  3. Cut the lemon twist into thin slices, put into alcohol and close it in a leakproof glass container for maceration. Hold it for 3 days in a dark cool place, shake it one time a day for better mixing.
  4. After three days, filter the lemon liquid from the twist with the help of a sieve.
  5. Mix water with sugar, bring it to boil until the moment sugar won’t dissolve.
  6. Put the syrup away from fire, let it cool down for some minutes. Mix the syrup with our “lemon alcohol”.
  7. Mix it all thoroughly, then put it again into the glass container and keep it for 30-40 days far away from sunlight.
  8. Our limoncello is ready!
