Eggplant with mushroom omelette

Eggplant and mushroom are pretty much my two favorite vegetables even though mushrooms are technically a fungi( let’s not get all technical here though). When I first learnt this recipe I was only gonna make it cause I’m like crazy in love with eggplants and well I wanted to know more recipes including it. It turned out to be pretty good, you don’t have to just have it for breakfast, sometimes when I come back from uni, I make this because it’s quick and quite filling.

Okay let’s see the ingredients and how we can make it. Oh by the way I keep these recipes super simple and short so you guys can get straight to the point without beating around the bushes.

Ingredients:

  • One large eggplant
  • 4-5 eggs
  • 5-6 mushrooms
  • 2 table spoons of flour
  • 1 diced onion
  • 1 diced potato
  • salt, Tumeric and pepper

Procedure:

First cut the eggplant in the shape of a cube, then wash it and let them dry. Add some salt to it.

Then in one pan start to fry the diced onions and then take them out. Use the same pan to stir fry the diced potatoes, sliced mushrooms and the dried eggplants. Mix all of the stir fried materials together.

In a medium sized bowl beat the eggs and mix them with some salt pepper and Tumeric. Add all the stir fried material and mix them together with the eggs. Lightly oil a pan and add the material, let one side fry and then flip it to let the other side fry. Make sure it’s cooked through out.
