Burgers in sauce

Hello again!

Tomorrow three of my friends are coming for dinner and I have made almost everything. I have made some veal burgers so I only have to heat them tomorrow when my guests arrive. I have made them in sauce because we are having them with white rice (see how to make them so that they keep well for a few days here), that I made yesterday, and with with the burger sauce it is delicious.

Costs and difficulties

This dish costs roughly €9. 80 but you have to take into account that there will be some left over, after cooking for four people.

I will take pleasure in telling you that most of the vegetables that I used in this recipe, were grown in a vegetable garden, as a project that my friend and I started in April. Do you want to know the worst? A hailstorm filled almost all of our "production", but we were able to save some of the plants.

The recipe is similar to that of the meatballs but I made them burgers, being bigger, it makes the process easier, and much faster. In fact, I never made meatballs because I think that they must be very demanding. I can't imagine making little balls of meat and trying to make them all the same size; If I did, I think that some would turn out like a globe and others like a marble.

Ingredients for the burgers

  • 350Kg of veal mince
  • 2 slices of bread (or one piece of baguette) soaked in milk
  • Four eggs
  • 4 finely chopped cloves of garlic
  • Salt
  • Flour
  • Oil

Ingredients for the sauce

  • 3 carrots
  • 3 green peppers
  • 2 medium onions
  • 1 peals tomato
  • 1 and a half glasses of wine
  • Water

Production of the burgers

1. Mix the meat with the bread soaked in milk, the eggs without beating them, the garlic and the salt; then simply stir well.

Next, with the help of a a spoon, make the meat into balls and pass them onto a plate of flour. You don't need to touch the meat; if you use a spoon, you can more or less make the shape, but if they are still slightly different sizes, don't worry; in this recipe, the difference in sizes is not problem, I am speaking from experience.

3. Once they are coated in flour, put them into the pan ( which we have already heated with a little bit of oil), press them with a spatula, to give them the burger shape, and fry them on both sides. Once they are done, leave them on a plate while we prepare the salsa.

You can make them as thick as you want, the burgers will not be done on the inside until they are cooked in the sauce.

Making the sauce

To make the base of the sauce; put all the chopped vegetables in the microwave, add a splash of oil, stir, and leave them in the microwave for fifteen minutes (take them out once, half way through to stir them again). This way, we hardly use any fat in the sauce.

You can use any vegetable that you like and even add aromatic herbs and spices. Then, put the vegetables into a pot, with the wine and a glass of water to cook for five minutes and blend them all.

Now, you only need to add the burgers, enough water to cover them and a pinch of salt. Leave them to cook until the meat is soft and now we have our dish.

The sauce will thicken over a few hours. This dish is much better the next day, so it is the perfect option because when your guests arrive you don't have to be in the kitchen.

A few suggestions for other sauces to try

Caramel sauce

My grandmother makes amazing meatballs with a sauce so peculiar that I couldn't not mention it. I don't know why but I have never tried to make this sauce; actually it is extremely easy and right now, I regret not using it for this recipe; I will the next time I make something with mince.

Ingredients:

  • Liquid caramel
  • 1 large onion
  • 2 carrots
  • 3 tablespoons oil
  • Beef stock

She makes caramel in the saucepan, by simply mixing twice as much sugar as water, and sautéed, tiny pieces of carrot and onion separately and then add them to the saucepan of caramel. Add the fried meatballs and enough stock to cover them; leave them to cook until the meat is tender and... I don't want to tell you how these meatballs have been done, all in the same tin! So, if I can encourage you, to cook these delicious meatballs before me.

Roquefort cheese sauce

Ingredients

  • One 200ml tin of liquid cream or condenses milk
  • 125 grams of Roquefort cheese
  • Three spoonfuls of cream cheese
  • Salt and pepper to your taste
  • Nutmeg (optional)

You only have to mix all the ingredients together and leave the cream on a low heat for a few minutes. Set the sauce aside and everyone can serve themselves as they wish.

I hope that you try this recipe, it is demanding but once you can, it takes no effort at all.
