Black beans with vegetables

Hello everyone!

The beans or black beans get different names such as "caraotas negras" o "frijoles negros" (both meaning black beans) and although they do contain more calories than other legumes, you should not forget about all the nutritional properties that they have. There are infinite ways to make the above mentioned legume, it only takes a little bit of imagination to combine the most tasty ingredients that we find in the kitchen.

Ingredients:

  • Five handfuls of black beans.
  • Half of a bag of preprepared "mixed vegetables" (I used one by a brand called "Verdifresh" which contains: courgette, carrot, red onion, leak and celery).
  • Half a litre of stock (vegetable, chicken or meat).
  • One small onion.
  • Two cloves of garlic.
  • Half a red pepper.
  • Half a green pepper.
  • Two medium potatoes.
  • A good splash of olive oil.
  • Salt and pepper to your taste.

Preparation of our casserole:

1. Wash the beans the night before and leave them covered, to soak in water. This way, the beans will puff up and be ready to cook the following day.

2. When its time to cook the beans, put a splash of olive oil in a pressure cooker and lightly fry the well cut onion and the two pressed cloves of garlic. In regards to the onion, when it starts to become transparent, add the peppers cut in chunks, leave on a low heat for three minutes and remove in from time to time.

3. Add the drained black beans and the potatoes, pealed and diced and the stock. Add a little bit of salt and pepper and incorporate the mixed preprepared vegetables.

4. Bring it to a boil and leave it to cook for twenty five minutes. If you are not using a pressure cooker, cooking time will increase considerably: in a conventional casserole dish, the beans (depending on the brand) can take two or three hours to cook.
