Autumn's pie with pumpkin, apples and quinces
Ingredients
It’s autumn so let’s make another pie recipe inspired by the current harvest that we have in Romania. The ingredients that you will need are:
- 300 grams of shredded pumpkin;
- 2 apples;
- 2 quinces;
- 100 grams of raisins;
- 100 grams of sugar;
- 250 grams of cream of wheat;
- 250 ml of oat milk;
- 3 small packets of vanilla sugar;
- 1 small packet of baking powder;
- Shredded skin of a lemon.
The preparation
The first step is very simple, you just have to mix the pumpkin, apples and quinces with the rest of the ingredients. The mix is then added to a round baking tray and put into the oven for about 30 minutes or until you consider that is cooked, usually when is getting brown on the edges it means that is baked.
In the meantime, you have to prepare a lemon syrup by adding in a pot the juice of one lemon, 150 ml of water with 200 grams of sugar which are put on the stove on a medium heat until the sugar is melted. When the pie is almost ready, put this syrup over itand leave it in the oven for more 5 minutes.
The pie is ready to be served after it has cooled down a bit. As you can see, the recipe is very simple to make, it doesn’t require lots of strange ingredients and major cooking skills being perfect to make for everybody. And is plant based too which makes it great for vegans and for the planet of course.
