Zucchini Souffle

  • 5 zucchini medium size (grated on the grater)
  • 3 fresh onions
  • 1 dried onion medium size
  • 1/2 bunch of dill
  • 3 twigs of mint
  • 2 eggs
  • 1 cup kefalotyri
  • 1 cup of feta cheese
  • Salt
  • Pepper
  • Olive Oil
  • Self raising flour


We put in a bowl thezucchini with salt for half an hour. We strain them out and remove their liquids and when we are done we put them in a basin. After that , we pour chopped fresh onions, chopped dried onions, dill ,  mint, eggs, kefalotyri, feta and olive oil. Then , add salt, pepper and flour to make a dough.

Finally, bake at 180 degrees for 30′-45 ‘until browned.

Ideally served with yoghurt or tzatziki!
