Zucchini souffle
Ingredients
- 5 zucchini medium size (grated on the grater);
- 3 fresh onions;
- 1 dried onion medium size;
- 1/2 bunch of dill;
- 3 twigs of mint;
- 2 eggs;
- 1 cup kefalotyri;
- 1 cup of feta cheese;
- Salt;
- Pepper;
- Olive oil;
- Self-rising flour.
Preparation
We put in a bowl the zucchini with salt for half an hour. We strain them out and remove their liquids and when we are done we put them in a basin. After that, we pour chopped fresh onions, chopped dried onions, dill, mint, eggs, kefalotyri, feta and olive oil. Then, add salt, pepper and flour to make a dough.
Finally, bake at 180 degrees for 30-45 minutes until brown.
Ideally served with yoghurt or tzatziki!
