Vegetarian Orzo

Ingredients:

  • two hundred seventy five grams of pasta orzo
  • one soup spoon of olive oil
  • one (about hundred and fifty grams) eggplant
  • one red pepper
  • grated peel of lemon
  • the juice of one lemon
  • one hundred and eighty-five black olives
  • three soup spoons of well cut basil
  • salt and black pepper
  • olive oil

Preparation:

  • You have to start by preparing the pasta as indicated on the cover of the package. When it is read, you put it aside.
  • Then you add the vegetables. Then you fry them for seven or eight minutes.
  • You have to add the pasta, the peel of lemon, and the lemon jice.
  • You have to cut the olives and you add them to the mixture that you have prepared until now.
  • You need to serve the meal warm and decorated with basil.
  • Bon apetit!
