Vegan cake with tomato paste and jam 

The ingredients that you need for this weird but delicious cake are the following ( at first, for making the cake’s sheets ):

  • 150 grams of sugar

  • 100 grams of tomato paste

  • 150 ml of vegetable oil

  • A peel of a lemon

  • 1 tablespoon of baking powder

  • Vanilla essence

  • 2 tablespoons of vanilla sugar

  • 100 ml of oat milk or water

  • 400 grams – 500 grams of flour

The sheets of the cake

For making the sheets, you have to mix the sugar with the tomato paste, oat milk, vanilla sugar and the peel of a lemon. Add the oil too. Then pour the flour with the baking powder over until it becomes a strong dough, good to spread with the rolling pin. Out of this dough you can cook four sheets of an orange pinky color.

The lemon cream

While these are baking, you can make the cream for which you will need:

  • 1 liter of oat milk or water

  • 150 grams of sugar

  • Lemon juice

  • 150 grams of semolina

  • 250 grams of vegetable margarine

  • salt

First, you have to put the milk ( or water) to boil with sugar and a little bit of salt. When this mix starts to boil, the semolina is poured over gradually and mixed continuosly until the cream thickens. Remove it from the heat, add the lemon juice and the margarine and mix everything together very well.

Last but not least, the assembly of the cake

The last step is to assemble the cake. Bring the sheets, the cream and the jam together. On a tray, put the first sheet on which you can add half of the lemon semolina cream on it. Then, put the second sheet on which you spread the plum jam – or otherwise you can use any kind of jam you prefer like apricots, strawberries.

The thrid sheets comes in and then the left sweet cream. Top everything up with the last sheet, the forth one. Above it grease with jam and sprinkle coconut flakes ( optional but recommended) 

The not so good part is that you can not eat the vegan tomato cake right way, but you have to leave it until its sheets had soften, thus, probably you can eat it the next day.  

The vegan tomato paste and lemon cake is delicious and it doesn't taste like tomato or like a soup, but more like lemon and jam and the sheets are so soft and good.
