Back in the kitcken with my mother! 

My mother is back in the kitchen teaching me the recipe of a vegan delicious cake that I have to share with you because is simply so tasty and worth trying especially if you are eating plant based and are craving for something sweet and satisfying. She says to me that this cake is named "Miruna"

The overall needed ingredients 

The ingredients that we use for "Miruna" for making the cake base are the following: 

  • 300 grams of biscuits

  • 50 grams of coconut flakes

  • 200 grams of bitter chocolate

  • 150 ml of soy milk with vanilla flavor 

  • 150 grams of margarine

On the other hand, the ingredients that we use for the Vanilla cream are:

  • 800 ml soy milk with vanilla flavor 

  • 6 tablespoons sugar

  • 2 packets pudding powder with vanilla flavor

  • 1 packet vanilla

And lastely, for the glaze

  • 100 grams of bitter dark chocolate

  • 50 ml of soy milk

Preparing the base of the vegan cake

In the first step, for making the cake base, the biscuits are chopped then the coconut flakes are added to it. The chocolate is melted together with the milk and the margarine. The melted mixture is poured over the chopped biscuits and stirred until it becomes like a cream consistency. We place the composition in a baking tray lined with baking paper and put in not in the oven, but in the refrigerator.

Making the vanilla cream

The next step is to do the vanilla cream, thus 600 ml of milk is put on the fire along with the sugar and the vanilla sugar. The pudding powder is mixed with 200 ml of milk. When the milk is boiling, we add the pudding and stir continuously until the cream thickens. The cream obtained is placed in the tray over the biscuit counter. We leave it to cool down in the refrigerator for 30 minutes. After that, we add the glaze which we made from 100 grams of melted chocolate in 50 ml of soy milk.

The vegan cake is better to be served the next day when all of the layers have been thicken up. If you cannot resist the temptation to tasted right away, I am not sure that you can cut it into slices, but you can give it a try. The recipe is quick, easy to make and most importantly when it comes to students, it doesn't require heating, which is great for those who are leaving in the student doorm and  don't have an oven.
