Spanish Tortilla
What would a hungry Spanish girl, a vegetarian Italian girl and a lazy Polish guy do on a Sunday evening when the shops are all closed, and they haven't eaten for the whole day?
Easy answer, cook Spanish tortilla!
It is one of the most easy to prepare, fast and versatile recipe I have ever had the pleasure to taste.
Due to the fact that it is a very adaptable recipe there are many different versions. The original one is made up of eggs and potatoes, but you can really use whatever ingredients you want.
This picture shows the typical Spanish tortilla, the one I'll explain first.
Ingredients
- 8 large eggs
- 6 cups (about 8 ounces) chopped potatoes
- Salt
- 5 tablespoons extra-virgin olive oil
- 1 sliced onion (optional)
As for the kitchen tools, you'll only need a large pan for the cooking process.
Directions
First of all, boil the potatoes, peel and chop them if you haven't already done it. The pieces have to be not bigger than the size of a coin.
They should look like this.
Then fry the sliced onion until the slices become translucent.
Mix the eggs in a bowl, then stir in the potatoes and the onion. Put the pan with the oil on the stove and heat it up. Pour the whole egg mix into it. After 5/6 minutes, turn the tortilla - my suggestion is to turn it over using a serving dish, so that you won't break it. Let it cook for 5/6 minutes more.
Put the tortilla on a serving dish. In Spain they usually cut it in pieces and put toothpicks on each piece.

Like this, everyone can take each piece easily. It is perfect if you're having a party or a meeting with friends because it doesn't have to be a meal.
If you want to try something different, or if you want to use various vegetables, the Spanish tortilla is perfect. It is not the same old recipe and it's easy to make.
For example, many people put peppers, zucchini, mushrooms and/or tomatoes instead of potatoes. Someone even puts ham - jamón, as a Spanish would say - or chorizo, which is a kind of salami.
Here, there's a version of tortilla with mushrooms, peppers and potatoes.
No matter what you want to put inside, the only necessary ingredient is the eggs.
