Spanish omelette with chicken and aioli.

Without a doubt, one of the best discoveries that I made in my year in Burgos is this delicacy. I personally like it filled with chicken and aioli but using the same base you can fill it with different things.

-Tuna and mayonnaise

-Spinach and cheese

-Bacon or jam and cheese

-Eels and prawns.

Ingredients for 4-6 people:

  • 4-6 potatoes depending on the size, they should fill a pan
  • Olive oil
  • Salt
  • 1 large onion (optional)
  • 6 eggs, depending on how much each person wants
  • 600grams of chicken
  • Aioli bought or homemade
  • Garlic

Utensils:

  • Knife
  • Fork
  • Chopping board
  • Bowl
  • Pan
  • Plate to turn the tortilla
  • Slotted spoon
  • Something to remove access oil
  • A blender

Steps to follow:

  • Firstly, peel, wash and cut the potatoes into small chunks and add a pinch of salt. There are a lot of options in terms of how you can cut them. I personally cut them in thin slices because it makes them fry quickly. But you could cut them in cubes or in the way that frozen chips are cut.
  • Next, cut up the onion into slices or small pieces and add it to the potatoes.
  • Then, put olive oil or sunflower oil, in the pan and heat it. It is important that you check that the oil is hot enough before you fry the potatoes and onion and then lower the heat so that it doesn't burn. This process can take between 18-20 minutes until the potatoes are golden
  • Once they are ready, take the lightly fried potatoes and onion out of the pan using a slotted spoon and strain the oil and set aside the majority of it in a container to use again another time.
  • Meanwhile, beat the eggs in a bowl and add an amount of salt that seems appropriate. I like to beat them by hand and then pass them through the blender, but this depends on the person.
  • After, mix the beaten eggs with the onion and potatoes and use a fork to mix it until it becomes a semi liquid mixture in regard to the amount of potato and egg.
  • Fry the chicken, cut with scissors because it makes it more fine and mix it with a aioli* in a dish.
  • Then, put a little bit of oil in the pan and add half of the mixture and fry it slowly. Once it is set, add the mix of aioli and chicken, and then put the rest of the tortilla mixture on top. Creating three layers.

  • Finally, after the tortilla is set, turn it using the plate and leave it until it is finished and … READY TO EAT!

It is important that you have a strength in your hands because it is quite heavy when you are turning it. I recommend that at the start you make the tortillas individually and when you have mastered them, you can innovate or evolve them.

*And finally, to make the aioli you will need:

Ingredients:

  • Salt
  • Oil
  • Egg
  • 2 garlic (one raw and another cooked)

Steps to follow:

Add enough oil to cover the blades of the blender in a bowl and then add the rest of the ingredients and mix them until you get the desired texture.
