Well, I want to tell you about this pound cake with lemon zest, too, which I just prepared, I mean, I always liked those chocolate bars with some lemon or orange zest in them and I really wanted to have some of them, however, I couldn’t really find that kind of chocolate bar here, that I would like and that would have that great taste and smell of orange. You know, I had tasted something like that when I was a little or something, I don’t really remember that, however, I remembered that taste and I was always searching for that kind of thing, though in vain. So, some days ago, I saw these Georgian chocolate bars, which are from Barambo company and they have this chocolate production called Sezoni and they had these new chocolate bars, and one of them was with orange. Well, I didn’t really know, it was with oranges or not, however, when I looked at it, it had this large round cut orange photo on it and so that I decided to have a taste of it and I bought one of them. I really wanted to taste it, however, it was late at night when I bought it and so that I had to wait until dawn or the new day to come to just open that chocolate bar and have it tasted. And when the other day came, I opened it and then my mother came, too, and she loves chocolate, too, you know, so that we tasted this chocolate bar together. It was just as great as I remembered. You know, when you are searching for something for quite some time, you just have this feeling of being that thing amazingly great, I mean, you exaggerate a little, at least. So that, I thought, that I had exaggerated that taste of my childhood, however, it seemed like, that I had not and it was just perfect. I really loved that chocolate and though I didn’t eat much of it, it was pretty satisfying, that this chocolate bar was just the one that I had been looking for all these years.
Anyways, tasting this chocolate bar, I remembered my pound cake recipes and how I could bake a cake with that zest in it and see how it would taste like. So that I decided to have another pound cake, but this time, it would only have this lemon zest and it would have a great taste, to my mind. And, besides, my mother really loved my other pound cakes, and now I could offer her another type of that pound cake, I mean, it would be really different from all of them, because it wouldn’t have any chocolate or cocoa powder or walnuts or raisins or anything except for this lemon zest, you know. And that would smell really amazing, if you want to know the truth, and, well, if the cake wouldn’t be good, at least it would smell pretty good, if you ask me.
So, I started preparing this cake. Well, of course, I asked my mother if she would eat that cake if I prepared it, because I didn’t really want to eat this whole cake alone. She wanted the cake, too, so that I started the preparation process.
Well, let’s start with the ingredients, because there were some changes in the ingredients, I mean, the amounts of the ingredients, however, there were not much changes,if you want to know the truth. Though , I will still list the ingredients.
Ingredients:
- ½ cup white granulated sugar
- 5 medium lemon zest
- 1 small grapefruit zest
- 50 grams of unsalted butter
- 1 tablespoon oil
- ¾ cup Matsoni or sour cream
- 1 teaspoon baking soda
- Drops of vinegar
- ¾ cup all-purpose flour
Preparation process
Well, the preparation process started with me shredding those lemons, I mean, I needed the zest , you know, the outside yellow part of those lemons and started shredding them on that thing. It was pretty easy, if you want to know the truth. Well, after shredding, those lemons looked like things without any clothes and they were kind of funny. You know, I had this grapefruit, too, which I was going to eat, so that I decided to use its skin, too, and shredded its outer part, too, with those lemons. Doing that was harder than the lemons, if you want to know the truth. So, finally I had all those lemons and grapefruit shredded on their skins and I had plenty of zest there in a small bowl.
After that, the usual process started, I mean, I had to melt the butter and add some oil and when it was all melted and stuff like that, I added the sugar to it and whisked it, so that they would kind of mix together and the sugar would get a little dissolved. Then I poured this whole mixture into a bowl of my standing mixer and started it on and had that mixture mixed well, while I took two eggs out of the fridge and added on by one to that mixture. I let the mixer mix those things together for a couple of minutes and then it was time for Matsoni and stuff. I had both Matsoni and sour cream and I decided to combine them and make them fill that ¾ cup and, to be honest, I had more Matsoni taken, than the sour cream. I mixed them together and then I had this one teaspoon of baking soda and I had some drops of vinegar sprinkled on that teaspoon and it got all foamy and stuff and I added it to Matsoni and sour cream mixture and whisked it well, so that everything would mix together well and then I put that mixture into the mixing bowl and let the mixer do its job. After that, I took the flour and added it to the mixture, mixed it with the mixture with a wooden spatula and then I started the mixer again and let it mix thise whole mixture very well. I also added one vanilla envelope and then I added the lemon zest and that was the final start of the mixer to mix all those things together thoroughly.
I had my halogen oven preheated on 200 degrees Celsius while I was preparing the baking form and stuff like that. I had to grease the baking form with oil and then I poured the mixture in it and that was it, I could just put it into the halogen oven. I had the oven turned into heating at 175 degrees Celsius and I had it set on one hour.
Well, after 40 minutes I checked my pound cake and it was already kind of ready, I mean, it was all doubled in size and pretty much golden and it was not moist anymore. So that I decided that I would leave it for another ten minutes and then I would take it out or whatever. So, after those ten minutes, I took the baking form out of the halogen oven and I just put it on a table, so that it would cool down a little bit and then I would be able to take the cake out.
To be honest, taking the cake out of the baking form was kind of hard this time, because, I didn’t let it get cooler, I guess, and I just rushed to it and tried to get it out. I took the silicon spatula and kind of put it through edges and after some time, when I turned the baking form upside down, the cake got out of the baking form, however, it kind of cracked, but that was not really a big deal , if you want to know the truth. Though, I really wanted it to be the whole one, but what could I do?! I just adapted to the fact, that it got a little cracked. However, the smell was just amazing and I could really be satisfied with just the smell of it, it had such a great smell and that smell was all around the room and it was really awesome.
You know, I wanted to taste the cake at once, however, it was still pretty hot and I decided to wait for it to get cooled down and then taste it. That way, I would get the taste of it in the right way and, besides, eating those things hot is not really recommended, as I know, especially if this something has walnuts in them, let it be ground or sliced or whatever. You know, my mother used to bake these cookies with ground walnuts in them and we just loved those cookies and we couldn’t wait for them to get ready and when she got them out of the oven, we wanted to eat them right away, and they were pretty hot, of course, and we waited for a while and then ate them when they were kind of warm or something like that and she would always tell us, not to eat them until they get cold, because that way they were bad for our teeth and stuff like that, however, no one really listened to her, because we just wanted the cookies and we wanted them right then and, besides, we wouldn’t let each other have more cookies, than us, I mean, I didn’t want any of my sister or brother eat more of those cookies, than me, of course. This was like a competition or a race or whatever and we were competing in how many of those cookies we could have. And, well, the cookies were not much for three people, you know, especially for kids, because we just ate all of them and, though there were enough cookies for everyone, it still seemed, that they were not enough. And they would never be enough for us, if you want to know the truth. That happens everywhere to everyone, I guess, because if children want to eat something very much, they would just eat that everything and there will never be that thing enough for them at that time, especially if that thing is really delicious. So that, you should really keep that in mind and if you are baking something for children, who love that thing so much, you should consider preparing plenty of those things,because they won’t be enough for those children when they start eating them and stuff like that.
Anyways, until my lemon zest pound cake got cooled down and everything, I decided to have some sugar powder sprinkled on it and it was just really lovely to look at that pound cake in all that sugar powder and stuff, because that day it was snowing outside pretty hard and when I looked at that pound cake in sugar powder, I remembered, that it was snowing and it felt kind of strange.
Well, after some cooling down, when my mother also decided to have some lunch, I mean, she wanted to drink some coffee and, well, the cake was already done and ready to be eaten, we cut the cake and tasted it. I must say, that it tasted really great. I mean, it was not too sweet, it was not too dry and everything was really amazingly good. I just loved that cake. And it was softer and lighter, than those previous pound cakes, that I had prepared, though they were with other things in them and they were very different from this one, if you want to know the truth.
Well, to be honest, I wanted this pound cake to be softer and moister, than the other ones and that’s why I kind of added a little less flour, and, you know, it was softer and moister than the other ones and it really looked like muffin , you know. And it was really great to eat and you would eat it in just one bite it was that light. Well, the lemon zest made the cake taste even better, too, and you couldn’t stop eating it, if you want to know the truth. I just wanted to taste it, however, I couldn’t stop eating it, and I ate plenty of it. You know, those cakes are like that, I mean, you start eating them and you can’t really stop eating them, because they are so light to eat and that’s why I really like them and that’s why many people like them, I guess. Well, one should really appreciate those cakes, because they are very good and , at the same time, it’s like you don’t even put much effort in preparing them, because they are really easy to prepare and they don’t really need many ingredients, either. And well, if you don’t like those cakes, you will still like them, I guess, because if you prefer cakes with cream fillings or fruits or something like that, you can still have them, I mean, it’s like a biscuit and you can add anything you want to them and they will become pretty great and just like you want them to be, because it’s really easy to have some toppings for biscuits and everything. The main thing is to have a biscuit, if you want to know the truth and, well, if you have a great biscuit like this one, then you will be able to have a cream filling spread on itor whatever you like and just enjoy the cake as you want. It’s not that hard, you know. And those cream filling cakes are nothing but some great biscuits with cream fillings and that’s all. You can easily prepare cream fillings, however, you will still need to put some effort in preparing them. Though , you can buy something like them in the supermarkets or buy some toppings, it all depends on what kind of cake you want to have, of course. So that, it’s all up to you and, the main thing here is that you can have a great biscuit with this one and then do whatever you want with it.
So that, you can enjoy this pound cake as it is or add some cream fillings or toppings to it and have it like that, it always be good and it will always taste good that way. And, at the same time, you won’t have to do much things about baking a cake and the portion will be just perfect, too, I mean, it is not too large or too small, it’s size is just perfect for me and my family, and, besides, you can always prepare some of them other times, as it is that easy to prepare when you have this halogen oven and everything, if you ask me. So that, I really enjoy preparing those cakes, if you want to know the truth. And it’s always better, when you have a fresh cake, then a cake from the day before that day, I guess. Well, it all depends on a cake, too, I mean, I’ve told you, that Tiramisu needs to be prepared a day before eating it for it to taste perfectly, you know. Or cheesecake _ it needs some hours to be in the fridge for the taste and everything. So, you should keep those things in mind when baking cakes and preparing these things!
Anyways, I wanted to share this another recipe of mine of the pound cake with you and give you another variation of a pound cake to prepare. This is a great getaway for anyone trying to prepare some easy and delicious cake, if you ask me, and I’m really glad, that I have that baking form and this halogen oven, so that I can easily prepare these very delicious pound cakes and not waste much time on them. You know, I used to prepare those kinds of cakes in my electric oven and they wouldn’t come out as I wanted and I was really upset about that, if you want to know the truth and I got pretty disappointed, however, I could use them in other things after that, I mean, prepare something like trifles or stuff like that. Though, it was still bad, when I anticipated something better and then it was not that one and I couldn’t enjoy the cake that I wanted.
Well, enough about those things and I just want to say, that I hope, that my lemon zest pound cake will be a good one for you and you will prepare it some time, I mean, it’s really great one if you love pound cakes and especially those ones with citrus taste in them, because this particular one is just a perfect one for you, if you ask me.
