Potato Tortilla

Hellooooo! Bearing in mind that the title of this blog is "Spanish food for dummies", surely a lot of you were hoping I would post the recipe for the principal Spanish dish: the potato tortilla. You had to wait a while, but here is the recipe for my favourite dish in the whole world.

To begin, the ingredients you'll need are the following:

- 5 or 6 potatoes (depending on how big they are)

I'll leave a photo here so you can have an example:

- 6 eggs

- 1 onion (Spanish tortilla is always made with an onion! ) And whoever tells you it's not, doesn't know what they're talking about... ).

So, the first thing we need to do is to peel the potatoes and cut them into quite small bits (generally they are cut into half moons, but the truth is that I do them as small as I like... ). We also have to cut the onion into pieces.

When we have everything, what we do next is mix them together in a bowl and add a drop of oil. How you fry the potatoes depends a lot on the person who has the recipe, and although the traditional way is to fry them in a frying pan, I don't have the patience to spend such a long time doing it, and what I do is fry them in the microwave.

So what I do specifically, is put the mixture of potatoes and onion in a glass bowl and put it in the microwave. How long to put them in for varies, and I take them out after 5 minutes and I give it a stir and I see how the mixture's coming.

When I finally take it out and I see that a type of "paste" has been created, and the potatoes are getting soft, I move onto the next step. Here I'll leave a photo of how the mixture should be:

What I do next is beat the six eggs with a fork in a bowl, and when that's prepared I add them to the mixture of potatoes and onion from before. I mix everything well, and now we're almost all ready.

What to do now, is to heat a bit of oil in a pan, and when we see that it's warmed up well, we add the mixture. We wait a while and keep moving the bottom of the pan from the tortilla so it doesn't get stuck.

And now comes the most difficult moment of all: turning the tortilla. What you have to do is use a plate that's more or less the same size as the frying pan, which will help you not break the tortilla.

Once we'd turned it, we let the tortilla cook on the other side, and then it's done. To put the tortilla on a plate, we have to do the flip again (which is a lot easier, and it's less likely to break) or simply move it onto the plate from the frying pan. You'll see whichever technique you prefer.

I'm not any expert on tortillas, and in fact, the first time I did it it ended up like this:

However, bit by bit I kept practising (and it's from living in a different country and having to always cook a traditional dish from your country so that you can continue your practice with tortillas). Because of this, the last time I did it, it didn't look too shabby:
