The introduction

Hello everyone, I hope, that you are all doing just fine!

You know, it's Easter coming and everyone is preparing for it and Georgians especially celebrate this day with their families and stuff like that. And , one of the main things on Easter is this Pascha cake, which everyone likes and there are many Pascha cakes everywhere you go.

So, let me tell you about this Pascha recipe, which I find to be very simple comparing to all those other ones, that I have heard and read about.

Well, you should have these baking forms for Pascha, which are pretty cute ones these days and you can buy them in many places, however, I still buy them in this Pasazhi shopping center in Tbilisi, which is above the Station Square metro station and there’s this shop, which I usually visit to buy these kinds of things and they have many Pascha baking forms there and you can just choose which one you want. To be honest, I really love those small Paschas, which are for just one person, if you want to know the truth and they are pretty lovely and my aunt used to bake them and we just loved those small ones, though there were not many small ones, because, as you know, it should be cut into pieces and stuff like that and, well, it’s a habit or something like that, that you should have that normal sized Pascha and then you should cut it into pieces so that everyone can have a piece of it, you know. Well, we loved those small Paschas and my aunt used to bake them one for each of us and we were looking forward to eating them, of course and they were very delicious and I don’t really know how she prepares them, because it’s kind of a long process and I hadn’t been there any time so that I could watch her prepare some Pascha, though she suggested watching her and learning how to prepare some Pascha.

Ingredients:

  • Milk, 250 ml
  • White granulated sugar 250 grams
  • Cream 35% 2 tablespoons
  • Cognac 1 tablespoon
  • Eggs, 4 medium
  • Butter unsalted 250 grams
  • Salt 1 teaspoon
  • Raisins (zucatti) 400 grams
  • Baking soda 1.5 tablespoon
  • All-purpose flour 1 kilogramme
  • Muscat 1 teaspoon
  • Orange zest 1 teaspoon
  • Cinnamon ½ teaspoon
  • Cardamon
  • Oil ¼ cup

Preparation process shortly

So, you have to have this middle sized baking form for Pascha and you should put that baking paper into it and grease it with butter. You should have milk warmed and then added 1 tablespoon of white granulated sugar and some salt and some baking soda.

Then you prepare the other stuff. You should have a little bit of flour into a bowl and pour it the milk and whisk, so that it will get mixed. Then you should add the flour until you get a thick mixture and then you should wrap it with some towels and set it aside for 15 minutes.

In the meantime, you should have a butter in the mixer and mix it until fluffy and then you should add the sugar and eggs one by one and mix them well. You should also add the cognac and cream and those spices.

Then you should add that mixture to the dough and add some flour and get some thick dough. And then you should put it into a bowl and wrap it into a towel and set it aside for it to get doubled in size. After that, you should add some raisins and put it into those baking forms on their 2/3 height and set them in a warm place. When the dough gets larger in size in those baking forms, then you can bake them on 190 degrees Celsius.

Well, I hope, that this recipe will be useful for you if you want to prepare Pascha easily, however, sometimes things don't just come out as planned, and, well, you shouldn't get your hopes up, because preparing a good Pascha can be a little tricky, as I know.
