Oloviye salad (Tastiest salad ever)

Okay I know Persian cuisine is very very diverse and so it's almost impossible to choose a favorite one but if it is possible, I have a favorite, among many favorites that I have but this is definitely one of them. This salad is a salad but it's not such a healthy salad so like don't make this if you are on a diet because it has loads of mayo sauce in it and well we all know that's not healthy much. I'm pretty sure this salad is actually russian and that they make it with meat, I'm not so sure but wherever this salad originally came from, I'm grateful and I am going to share the Iranian version of it with you.

Ingredients:

5 medium sized potatoes

2 eggs

1 chicken breast (or two small ones)

pickles - about 150 grams

salt, black pepper and vinegar- as much as needed

Mayonnaise sauce- about 3 full spoons (But it depends on you)

Procedure:

Okay so the procedure is super easy and literally the mixing of the stuff if all the ingredients are ready won't take more than 5 minutes to make the whole salad. so let's see how the simple procedure is:

  1. Well first put the potatoes and the eggs in some water in a pot and let them cook throughly for about 40 minutes or so, it really depends on your potatoes because the eggs are done in less than 20 minutes.
  2. Then cut an onion into small pieces, fry it a little bit and then add the chicken breasts to it; let the chicken breasts then fry as well.
  3. Add some salt and pepper to it and in the end some water so the chicken also cooks inside and out.
  4. Now give it some time so both the chicken and the potatoes are cooked.

Once done, peel the potatoes and the eggs and start grating them on one pot, then take out the cooked chicken breasts and start cutting them into small pieces, not with a knife just with your hands and add it to the same pot. When done, wash the pickles and start cutting them into small cubes and add them as well. Now you're pretty much done! Well then add the mayo sauce with about one or two tablespoon of vinegar (I use apple vinegar), then add the salt and pepper. Make sure to mix everything throughly and then taste to see if it lacks any sort of flavors. Let it cool, and serve it. I usually make a sandwich of it with lettuce and tomatoes.
