New potatoes with herbs recipe

The introduction

Well, hello everyone. It’s spring now and this is the season of new potatoes so that everyone cooks those new potatoes and they just love them. I’m sure you love them, too, and if you haven’t tasted them somehow, I really recommend you tasting them, because once you’ve tasted them, you will love them.

My family members just love potatoes and we have many different recipes of potato dishes, but most of them we make cooked potato dishes, I guess.

This dish doesn’t require pan, however. It’s a special recipe for new potatoes from my grandmother which I’d like to share with you and kind of make it popular, because it’s really delicious and one of the perks of it is that it’s not dry, but it’s kind of a soupor whatever and people should eat soups if you ask me so that the body won’t get dehydrated or something like that and I just love this dish because of that, too.

My grandmother's recipe

So, I was visiting my grandmother some days ago and we bought some new potatoes and I really wanted to make that dish, so I asked my grandmother to tell me the recipe, and so she did and I made the dish. Of course it was my first time and I really didn’t get it right for some reasons, but the recipe is here, I remember it and next time I will do it the way it should be done and it will be perfect I truly believe that!

You don't need much to prepare this dish, so it's very easy to collect all the ingredients and it really doesn't need much attention or carefulness, if you ask me, so you should really consider preparing this dish! Check this out: you only need some new potatoes, herbs and water! And the dish is great and tasty! And with only just those ingredients!

My grandmother told me how she got the idea of this potato soup dish and so I will tell you. She was born in 1930s and then there was this World War 2 and stuff and when she got to the university students didn’t have much money for living. So they tried to make things in an easy way and just prepare something that would not cost much and would last long and would be enough to last for some time, etc. You know what I mean? And potatoes are such things that many people have in Georgia, especially in Kakheti, I think. New potatoes are pretty delicious and they are at spring and I guess everyone is waiting for spring for those new potatoes to eat. My grandmother is from Patardzeuli _ this is a village near Tbilisi and they prepare a dish in Patardzeuli with new potatoes, however it is not a soup but just potatoes. And by the way, that dish is very tasty, too, and I would like to share its recipe with you in another blog.

So, they had these new potatoes and my grandmother decided to make a dish differently _ with water and, hence, it was thought to be kind of like a soup.

Now I will tell you how the dish is made.

Ingredients:

  • New potatoes 1 kilogramme
  • Fennel up to 100 grams
  • Parsley 30 grams
  • Green onions 60 grams
  • Salt to taste

Preparation process

Well, first of all, you should know that those new potatoes should be of good quality, of course and they should not have damages or something like that. But if they do, you should just cut those places off, so that the undamaged parts will be used in the dish, that’s no problem at all. Then you take a saucepan, wash the potatoes thoroughly and put them in the saucepan and add some water to fill the saucepan. Then you add some salt to them and you should add the herbs at that time, too, so that their taste will diffuse in the water and into potatoes and that’s how we will get that special taste of my grandmother’s dish which we love very much. Or, at least, I love!

Well, maybe you would already have guessed that you need to chop fennel, parsley and green onions. As my grandmother says, it’s good to have much fennel for the dish. Then comes the green onions, and you should take a little parsley _ it should not be much.

So, you just kind of dump every ingredient at once in a saucepan and that’s it. Then the water will boil and you should set a low heat and let the dish cook. It should cook until the potatoes are cooked and it really doesn’t take much time. You can test whether the potatoes are cooked or not by driving in a fork or just by tasting it, whatever you like.

You can eat it like a soup, or just take the potatoes out with those herbs and eat it dry, it’s up to you, but I personally like eating it as a soup and, I think, you should, too, because it’s very delicious that way.
