I do not know the reason, but in the past few years, I started to really like sweets that taste like lemon. I even like lemon yogurt. If you offered that to me when I was a kid, I would blatantly refuse to eat it. But tastes change, as they say, and I am a living proof of that statement.

A few months ago, I was attending a birthday party, where they served some delicious desserts. And one of them was something that I now call my newest obsession - the lemon bars. Once I took a bite, I said to myself that I have to make this at home, so I asked the host for the recipe. And I was actually just a little bit disappointed when she told me that these lemon bars are made from the box, not from scratch.

Nowadays, you can buy prepared baking mixes for most desserts, such as chocolate cakes, muffins and so on. All you usually need to do is add water and eggs. But since I am not that lazy, I, whenever I buy a prepared mix, usually improvise a little and add more ingredients than the recipe calls for, to make it taste better. Well, and to have a sense of accomplishing something.

And since I liked these lemon bars so much, I bought a box of the mix during my trip to the grocery store. And when preparing them, I also added some random ingredients. The final result was amazing, so I am sharing the best recipe for lemon bars with you.

By using the mix, you will eliminate the need of adding flour.

Ingredients

  • 8 x 8 aluminium foil pan for single use;
  • One lemon bar mix.

For the crust:

  • One teaspoon of powdered sugar;
  • One teaspoon of melted butter or canola oil.

For the topping:

  • A few drops of lemon juice;
  • A pinch of baking powder;
  • Two eggs.

Preparation

Before anything else, preheat the oven to 350 degrees Fahrenheit. Once you have all the ingredients together, it is time to start. You know, the sooner you start, the sooner you can eat.

When you open the lemon bar mix box, you will notice that it contains two pouches. One pouch contains the crust mix, which goes to the bottom of the pan, and one pouch contains the lemon mix. You will start with the crust mix.

First, grease the pan well. Cooking spray works just fine, you can also grease it with butter.

This is the cooking spray that I usually use. With this recipe, it really is very important to grease the pan well so the crust can stick together.

Take a small bowl and mix the crust mix, the melted butter and powdered sugar in it. Do not worry, the mix should not be completely liquid. Then, put the crust mix into the aluminium foil pan, and distribute it evenly. Then, press it firmly to the bottom of the pan with your hands.

Bake just the crust for ten minutes at 350 degrees Fahrenheit. While you are waiting for the crust to be ready, you can prepare the rest of the mix. Take a medium sized bowl and put the second mix in it first. Then, add the eggs, baking powder and lemon juice. Whisk everything together and set aside.

Once the crust is baked, take it out of the oven. Whisk the second mix briefly again, and then pour it over the crust. Then, put everything back in the oven for twenty five to thirty minutes. Once the lemon bars are done, put them in the refrigerator for a few hours. After cooling them down, you can cut them into slices… and enjoy!

Storage and serving suggestions

Lemon bars are easy to store because of the single use aluminium pan that you will be using. You can simply cover that with a plastic wrap and store them in the refrigerator until you feel like eating them again. If you are planning to serve the lemon bars in a fancy way, you can slice a lemon into tiny pieces and put them on top of each lemon bar, and you can also put some whipped cream on the side. Yummy!
