Kharcho with chicken

The introduction

Well, today I’m going to tell you about my kitchen therapy, again. This time I want to tell you about the decision of preparing Kharcho soup with poultry. This is a great dish, besides, that it is a soup and, since winter is coming, it’s the soup season starting, if you ask me. Winter is kind of associated with soups and stuff like that, I guess, that’s because my grandmother used to prepare soups in winter. Well, she always prepared soups, if you want to know the truth and it was always very delicious, so that I could not wait until the soup was ready. It was really good to have some soups at home, because that’s how it is, you need to have something with stock or something like that, it’s impossible to always eat dry food, I mean, dishes without juice or stock or whatever. Our body needs fueling with soups and that’s what it is about. Nowadays no one really prepares soups or something like that and they eat meals without any water in it and, well, they may be trying to drink water throughout the day, however, eating soups is not the same and it’s really necessary, if you ask me. Especially for children, because they need much energy during the day and they can’t really get enough of it with just eating those stuff that they eat nowadays. I mean, they just go to fast food restaurants and eat there and, well, they may get much calories with those hamburgersor whatever, however, that’s not healthy and not really recommended, of course. It just makes me crazy, that parents get their little children to those fast food restaurants almost every day and let them eat those stuff, when they know, that it’s not good for their children. However, those children want to go there and so that the parents don’t say no to them. Well, guess what? You should be able to say “no” to your children and make them eat at home. Or, you shouldn’t have taken them to that fast food restaurant in the first place!

Anyways, I was writing about my Kharcho soup. You know, I have loved Kharcho soup from my childhood and it’s like my childhood dish. People would prepare Kharcho when they knew that I was going to visit them or whatever, that’s how much I loved it. My aunt especially used to prepare it for me as she knew, that I would be very happy to have Kharcho, and she loves preparing dishes, so that it was not a problem at all, moreover, it would make her happy, too, of course, when she saw me happy.

Well, to tell you the truth, traditionally, Kharcho soup is prepared with beef, however, today I decided to have chicken breast cut into small pieces instead of beef and prepare Kharcho soup with it. I didn’t really know, how it would taste, however, I guess, it would taste not very different than the beef one and, besides, I would create something new. Well, at least, it would be something new to me and I would experiment and see what would come out of it all and if it was good, I would prepare Kharcho soup with chicken more often , I guess, because it’s something that I always have in my fridge. You know, chicken is pretty popular these days and everyone just eats poultry and it’s kind of healthy and if you eat chicken breasts, then it’s pretty good, because it doesn’t have much calories and is good for weight management and it’s easy to prepare and you can prepare so many different dishes with chicken breasts, that you can’t even imagine, and, of course, the preparation process, I mean, the cooking of those chicken breasts is pretty easy and doesn’t take long, so that everyone’s happy with preparing it and life is easy because of that, if you want to know the truth. So that, if you haven’t tried preparing chicken breasts and having them in your daily routine or have them once in a week or something like that, I recommend, that you start using them in your kitchen and having them in your fridge or freezer, so that whenever you want , you can take them out and prepare them. It’s pretty good if you are having a sudden guests and you little time for preparing something and you can’t go out to buy anything and you just don’t know what to do. Then you remember, that you have chicken breasts in your fridge and you can take them out and prepare them and make Caesar Salad from them or make some chicken and cucumber salad or any salad, everything can be tasty with them if you prepare them, trust me. It’s just really easy to think of something to prepare with chicken meat.

Well, I wrote too much, I guess, however, now I’m going to tell you about this Kharcho soup with chicken fillets.

Kharcho with chicken

Ingredients:

  • ½ chicken breast, boneless
  • 2-3 litres water
  • 4 tbs tomato paste
  • 1 tbs Tkemali
  • 1 tbs red wine
  • Kharcho spice
  • 1 tsp red pepper
  • 1 bae leaf
  • 2-3 onions, chopped
  • 2 tbs oil
  • Salt to taste
  • 130 grams white rice

Preparation process

So, first of all, don’t get all crazy about the ingredients. They may seem too much and you may think that preparing this dish can be difficult and time-consuming, however, it’s not, and you will see that soon.

Well, the first thing, that I did was to chop onions and this chopper that I have does a pretty good job in chopping things, especially onions. Then I took a medium saucepan and poured some oil in it and put it on a gas on a high heat and then added those chopped onions in the saucepan, so that they would get cooked until golden. When they got kind of golden, I added some salt and Kharcho spice to them and let them cook for a little while. Meanwhile, I had this chicken breast cut into pretty small cubes and put them into another saucepan with water and let them boil for a couple of minutes. Then, after that time, I put them out of that water and added them to the onions’ saucepan and let these two cook together for a couple of minutes. After that, I added some tomato paste to them and some Tkemali (that is Georgian sauce, which everyone loves and it’s made of that tree plot, which is called Tkemali) and some red wine. I let them cook for a while and then added boiled water, so that it wouldn’t get burned on the bottom and , well, for everything to be cooked.

Then, after some time, I added that white rice to the dish and stirred and let it be like that with the lid on and on a low gas occasionally stirring, so that the rice wouldn’t stay stuck on the bottom. Of course, I used to taste the dish, so that I would know, whether it lacked something or not and if it did, I would add those things. You know, it kind of lacked some tomato paste and I added a little bit of it and I added some ground red pepper, too, so that it would be spicy. I like things to be spicy. Well, not too much spicy, but it’s good to give it a little taste of pepper, if you want to know the truth.

So, after all those things that I had done, it would be pretty enough for the dish, I guess, however, when I tasted it, I thought, that something was missing, I mean, there needed to be something else, too, to give it a proper taste, so that I decided to give it a try and added some Tkemali, however, I think, that I poured a little bit too much, because then it had this strange taste, and I guess, it was because of that. Well, to be honest, I didn’t care much about that, because it was not that bad, besides, it needs some time everything to get mixed together well, so that, I will wait a little, until everything gets assembled and then I will taste it again. You know, the rice absorbs many things and, I hope, that it will absorb this taste of Tkemali, too, and it will taste great the other day. You know, it’s recommended to eat those kind of stuff the other day, because the ingredients are settled and stuff like that in that case and everything is just perfect. However, people don’t usually do that and they want to eat the dish immediately and then they kind of don’t like it, I guess. Well, that’s because it’s new and not everything is settled in that saucepan right away, so you should remember that and consider tasting the dish the other day.Of course, you can eat it that day, too, no one says, that you shouldn’t eat it, however, it’s better the next day. Just like Tiramisu _ it needs to be refrigerated from 6 to 24 hours or something like that for it to be all delicious and stuff. And then, some may say, that it’s old and it won’t be good and it will be bitter and stuff like that, but, hey, it’s not! It’s the way it has to be eaten so that one can get the actual taste of this dessert!

Anyways, this Kharcho soup with chicken was ready and all I had to do is to wait a little and then taste it again. To be honest, I wanted to eat it today, I mean, the day that I prepared it, so that after some time, I poured it into a small bowl with all those chicken pieces and rice and tasted it. well, it really tasted good and the meat was pretty well-cooked and it was just the way I liked. The soup didn’t lack anything, it just had this little strange taste of Tkemali. Well, maybe it was that I was hungry, that I found the soup delicious, but I don’t think this was the case now. It really tasted good and I was glad about it. and I realized, that soup was what I lacked the whole day. Well, maybe for a week, even. Because I felt like I had to drink water and I was thirsty, however, drinking water didn’t help much, so that I decided to have a soup and I prepared this Kharcho soup and that was it, the thirst killer!

You know, you can add some other things to this soup, I mean, it’s not really necessary everything to be exactly how I say. Well, then it won’t exactly be this Kharcho soup, however, it still was not the exact Kharcho soup, because, first of all, I used chicken meat, not beef, and then, I used some other things and spices, which, I guess, they don’t use it in real Kharcho soup, however, I like spontaneity in preparing some dishes and stuff and I like to experiment, so that I usually don’t exactly do everything they say about preparing some recipes, you know. sometimes I add some things and sometimes I change things, etc. Maybe that’s why my dishes are always different and not the same, ever. But that’s how I do it, and, well, at least they are still delicious, that’s what matters, if you ask me. And then I remember what I use in those dishes and write about them sometimes, just like this article. So that, when I want to prepare this dish again or something like that, I can go to my blogs and search for the recipe and read it and, well, I guess, I will still modify it and prepare it some other way, however, I will still have it written and I will find it whenever I need to. That’s the best way of having recipes collected, I guess, because you can read them whenever you want and from wherever you want, I mean, you can access them from anywhere anytime and that’s really good. Our grandmothers and mothers and aunts had these books or notebooks or cooking books or whatever they were called and they would write those recipes in them and have them at home. Well, maybe they needed to have those recipes when they were somewhere else, then, what would they do?! Perhaps they would know beforehanded that they would need some recipes and they would bring those cooking books wherever they were going, however, that would be pretty annoying, going somewhere with that book in your hands. And our great grandmothers probably didn’t even have those cooking books and they would remember everything in their minds. That would be pretty hard. However, when you do something repeatedly, then you remember it quickly and then you don’t forget it for some time or ever, it all depends on the frequency of repetitions, if you want to know the truth. Well, when you get experience, then it’s all easy and stuff and then you can do many things. It’s all about experience, you know, in everything. And you just need to be experienced, in order to get a job, however, it’s all complicated and that’s another case. Probably I will write about that some day, however, today is the Kharcho soup day and, well, it all went well, if you ask me. And the decision of preparing it was pretty good. I’m very satisfied about my decision. And here’s the recipe of it all and I hope, that you will find it pretty helpful and that you will prepare this Kharcho soup yourself, too.

So that, this is how I prepared my Kharcho soup with chicken breast and, trust me, you won’t regret preparing it if you like eating soups and stuff like that. Or, maybe it’s time to taste something like that and this is a good way to start. Just prepare this dish and taste it and then you will probably prepare it often, as it is not that hard to prepare it and it’s good and it’s healthy and it is something that is necessary to have once in a while, if you ask me. You may even modify it and make it just like you want it to taste, that’s not really a problem. Or you can prepare it with beef, you know, it will be great, of course, because as I’ve already mentioned, Kharcho soup is usually made with beef. You can add some fresh herbs, like parsley at the end of the dish being ready, if you want, it will give the dish a special taste, too. So, the ideas are various, you just have to be imaginative and that’s all. You can prepare dishes all differently and they will all be awesome if you don’t burn it or something like that. And you need to be pretty determined to burn that dish, if you ask me, because it really doesn’t need much attention, you just have to put the saucepan on a low gas and that’s it. it’s really that easy. Well, if it’s your first time ever cooking, then you might find it kind of difficult,however, I believe, I told you everything, that I did while preparing this dish, and, I guess, it will all be very helpful for you.
