As I’ve already mentioned in my other blogs, Khachapuri is the most popular fast food in Georgia and it’s pretty delicious, too, of course, or else who would want to eat it?! So, this Khachapuri has many different variations. There is Imeruli Khachapuri _ which is the most sold one in Georgian fast food bakeries and other stores, too; there’s also Megruli Khachapuri, Acharuli Khachapuri _ two of the most favoured ones after Imeruli Khachapuri, and there are other types of Khachapuri, too with different recipes and stuff like that.

This Khachapuri is not like any of the mentioned above, as it is kind of different and I think they call it “Listis Khachapuri” and I don’t really know how to translate it in English, because it’s kind of hard to understand why it’s called like that. It’s like a pan-Khachapuri or something.

Anyways, this Khachapuri is baked in an oven and the pan of this oven is large as you know, and so then you cut this Khachapuri into pieces and serve that way, so that this whole one is a “Listi”, if you know what I mean.

The level of preparation is not very easy and not very hard, so it’s fine and it doesn’t really take much time if you do it in a normal rhythm. It doesn’t take anything to double in size or be cooked or pre-prepared or something, so you just need to mix the ingredients, roll the dough and that’s kind of it!

So, let’s get started, shall we?

Ingredients

  • 4 cups of all-purpose flour
  • 0. 5 litres Matsoni (or Greek yogurt)
  • 1 tsp baking soda
  • 1 tsp vinegar
  • 150-200 grams butter or margarine
  • 2 eggs
  • 0. 5 kilogrammes cheese
  • 1 medium potato

Preparing the dough

First of all, you take a large bowl where you will mix all these things for the dough. Now, you will need a grinder or something to grind the butter or margarine. When you grind it, put those 4 cups of flour into the bowl on that butter or margarine and then mix them together with your hands, so that it all will become like a sand, well, at least I associate it with sand.

Then you take some baking soda, add some vinegar drops to it and add them to Matsoni or Greek yogurt and mix them together. Then you add that mixture to the flour mixture. Then add 1 egg to this and mix the whole thing thoroughly. You should have a soft dough after this. It may need some flour, though, if it's sticky or very soft, as the flour can be different.

Now, divide the dough into to parts and you can set them aside for a while.

Preparing the filling

Preparing the filling is pretty easy. You just have to shred the cheese, or you can even buy cheese that is already shredded. Until you prepare the dough you can take one potato, peel it, cut it into small pieces, put them into a small saucepan filled with water and boil them. It doesn't need much time, so that when they are soft you can take them out and shred them or make some puree out of them. Now, you can add the cheese and 1 egg to this potato puree and mix them together. The filling is ready!

Now, take one dough, roll it and put it on a pan that is oiled, or you can put the dough on a pan and roll it there with a stick or with your hands. Then you can add the filling to it. Then roll the other dough and put it on the filling.

People spread egg mixture on the top of Khachapuri, or you can take some Matsoni and add some coffee granules to it and mix it and spread this mixture on the Khachapuri.

Now all you have left is bake! Preheat the oven on 170 degrees Celsius and after a couple of minutes put the pan in the oven. It should take about half an hour or 40 minutes to bake. But you should check it from time to time. When it's ready it should look like this on the picture below and it will have a great smell!
