Well, now I want to tell you about this other recipe, that I know people use to prepare Gozinaki. It’s not that easy, however, it’s still not very difficult, either. I mean, there’s this thing about preparing honey for Gozinaki and it’s like boiling it for some time and things like that.
First of all, let’s see the ingredients.
Ingredients:
- Walnuts 200 grams
- Honey 100 grams
- 10 grams of white granulated sugar
Preparation process
The preparation process starts with the cooking of walnuts on a low gas heat and when they start taking their skin off then off, you should turn the gas off and let them cool and get cold, so that you can take their skin off and then slice them in long pieces.
In the meantime, you should pour the honey in a saucepan with kind of thick bottom and put it on a low gas heat with constantly stirring with a wooden spoon. In about 15 minutes, you should check the honey, I mean, you should have a glass full of cold water and you should have a drop of honey poured into that glass and if the drop doesn’t dissolve and stays just like that without changing its shape, then you can say that the honey is ready and then you can add some sugar to the saucepan and boil the honey for about 2 or 3 minutes.
So, after that, you can get the saucepan out of the gas and add those sliced walnuts in it and mix them together. After that you should take the mixture out and have this large wooden board on a table or somewhere else and, well, this board should be wetted with some water. So, you should roll out the mixture with a wooden roller, which should also be wetted with water.
You know, they say, that the thickness of Gozinaki shouldn’t be more than one centimeter, and, well, one centimeter is more than enough, I guess.
Well, you should cut the mixture of Gozinaki until it’s hot and until it gets cold. Gozinaki usually has diamond shape and people usually cut the mixture in diamond shapes, hence. And if you want your Gozinaki to be sparkling or something like that, you should have your hand wet with some cold water and put it on the mixture when it’s kind of warm or something like that.
One other thing, that you should remember is, that if the mixture gets cold and you haven’t cut it into shapes, you can just heat the knife on a gas or something like that and cut that Gozinaki mixture into those diamond shapes that way.
Gozinaki with hazelnuts
So, as I’ve already mentioned above, Gozinaki is made from different nuts and seeds, however, the regular Gozinaki is made from walnuts, as you understand. And if you love hazelnuts and have them for yourself and want to have Gozinaki with hazelnuts and not some walnuts and stuff like that, you can easily use them and there’s was this recipe of preparing Gozinaki with hazelnuts and it was pretty much the same as preparing Gozinaki with walnuts, of course, however, I will still write about it and you can enjoy this recipe, too, besides the walnuts’ one.
Ingredients:
- Honey 600 grams
- Hazelnuts 1 kilogramme
- Sugar 3-4 tablespoons
Preparation process
Well, as you can see, the amounts of ingredients are pretty much more than enough, I guess, however, it all depends on how much Gozinaki you want to prepare. Well, of course that is more than enough for just one or two persons, however, if you are having some guests or serving it to your friends or family or if you just want to have plenty of Gozinaki, you can take these amounts and prepare Gozinaki from them. Well, on New Year day and some days after that, people usually come to your house and you have some guests and stuff like that, that is like a tradition and many people hang together in someone’s home and it’s like you should really have something to serve to your guests, so that having Gozinaki is a traditional and a great idea at that time.
So, having some hazelnuts, the very first thing that you should do is to cook them in a frying pan without oil, you know, and cut them into pieces. I just love the smell that it has when it’s cooked.
Well, in the meantime, you should take the honey and pour it into a saucepan and put it on a low gas heat and boil it with constantly stirring. When it boils, you should take the saucepan off the gas and let it cool a little. After that, you should boil the honey once again. Then, you should add those cut hazelnuts to the saucepan with honey and stir and stir. After 3 or 4 minutes, when the hazelnuts change their colour, you should take the saucepan off the gas and take out the mixture on a wet wooden board. You should have a wet spoon or something like that and kind of roll out the mixture on this wooden board, or you can take that wooden roller and roll the mixture out on the board. However, some people make it like balls and they have them that way and they are pretty beautiful if you put them into those colourful papers like muffins or cupcakes and they will be really lovely and people will just love them, if you ask me. However, doing that may be kind of difficult, because the mixture should still be hot to get them the desired shape, so that you may hurt your hands or something like that and for that maybe you will need something to have on your hands or I don’t know.
Well, I guess, I wrote pretty much about Gozinaki and about preparing Gozinaki and how I prepare it and everything, and Gozinaki with walnuts and Gozinaki with hazelnuts and I think, that you may want to prepare some Gozinaki after all this. And if you prepare it and if you like it, you should know, that it’s really good for our body, I mean, everyone knows, that honey is good for us and the walnuts or hazelnuts are pretty good for the brain, in the first place, so that if you don’t add that sugar to your Gozinaki, it’s pretty much the very benefiting thing for us, of course, if we don’t overeat it and stuff like that.
So, enjoy your cooking and preparing Gozinaki and serving it to your friends or serving it to yourself and make others love your work and be amazed by your cooking skills.
