  •       Hola todos! We meet again! Since I love cooking and I believe is a kind of art..basically in my opinion art is whatever we do with passion....so I would like to write some recipes that I love and some recipes that are traditional from my country(Greece)...I hope you love it, I will try to explain them as easier as possible...I will write one recipe per time, so, not to confuse you...

  • This recipe is a vegetarian recipe also, so if someone that don't eat meat or dairy products for his/her own reasons can enjoy it as well! :) Let's begin with the ingredients:

  • INGREDIENTS:

1 onion

100gr. olive oil

1 garlic clove

1 ts. sugar

500gr. potatoes

1ts.tomato paste

50ml white wine

zest from one lemon

400gr grated tomato

300ml water

1kilogram of fresh beans(or frozen)

4-5 leaves of spearmint-mint(optional)

4-5 leaves of parsley(optional)

salt

pepper

  • FOR SERVING:

200gr Greek cheese(FETA), in this photo the white squares that you see is Tofu, is not real cheese, I avoid dairy products because it causes me some hormones problems..but this is up to you!

1ts oregano dry

3-4 bread slices

  • PREPARATION METHOD:

Place a pot on high heat and add 2 tbsp. olive oil.

Chop the onion and put it in the saucepan.

Chop the garlic and put it in the saucepan along with the sugar. Saute until the onion is softened.

Peel the potatoes cut them into pieces and put them in the pot.

Add the peel, quench with wine, stir and leave to evaporate. Put the zest from the lemon, tomato, water, and cube.

Cut the edges of the beans, put them in the saucepan and mix.

Close the lid, lower the heat to moderate to low and simmer for 40-50 minutes.

Remove from the fire and add the mint, parsley and green part of the fresh onions that have been minced, salt, pepper, 80 gr. olive oil, mix and serve.

Serve optionally with a slice that is sprinkled with oregano and olive oil and slices of bread.
