The introduction

Hello everyone, I hope, that you are all doing just fine.

In this article I want to share another recipe with you and it’s quite a new recipe for me and I’ve just tasted it recently, however, it is really an amazing dish and you should really try it out, because it’s healthy and all those natural ingredients make it taste even more amazing and it’s really good for you, and, besides, it’s a soup, which means, that it has all those powers of water and you need much hydration throughout the day as you know, so that it’s a perfect dish for that purpose and eating it will leave you satiated for some time and you won’t feel hungry, you know.

So, this dish is called “Matsoni soup”, however, it is not that simple. I mean, I don’t really know, why it’s called Matsoni soup, because it’s not really Matsoni, that makes up the dish. You can add some Matsoni, but it’s not just Matsoni, that consistutes the dish, as I said or anything about Matsoni and you just get confused here, you know. So, having heard this term Matsoni soup, I wondered what it would taste like and I kind of thought about Matsoni and its sour taste and how this soup would be kind of sour or something like that and I really didn’t want to taste it because of that. I mean, I love Matsoni and I eat it most of the time, because it’s a great thing for everything, I guess, however, I couldn’t imagine eating some Matsoni soup and that’s why I hadn’t tasted it anywhere else, I guess. However, this one time, when I was visiting my friend, her sister prepared this Matsoni soup and though I was not going to eat it for those obvious reasons that I’ve just written above, it had such a great smell, that I decided to taste the dish. Well, to be honest, it tasted really good and it would have been a mistake not to taste it at all.

Well, this dish was a pretty good one and I really liked it, and, besides, it had all those dairy products in it and it was a great thing for everyone, you know, and it also has eggs in it, so that you get lots of proteins and calcium and vitamins from it, so that you should definitely try it, trust me.

And after that day, I had been wanting to prepare this dish on my own, however, I always forgot to ask her about the ingredients and stuff like that. And once, when I visited my friend again, she told me, that they were planning on having some Matsoni soup that day, too, so that it was a good idea, because I could watch her prepare this dish and then I could prepare it myself, you know. So that when she started preparing it, I watched her do all those stuff and everything. then she also sent me this text of how to prepare the dish and I just had to have some time for it and those ingredients at home , so that I could prepare it. You know, it doesn’t really take much time either, I mean, it didn’t even need 1 hour for her for the dish to be prepared and that’s pretty cool, especially if you don’t have enough time for anything and you just really want to have some soup and, you know, preparing soups can be much time consuming thing and then you change your mind and just buy some fast food or something to be ready in much shorter time and that way, you don’t hydrate yourself with any stock or anything, you know, and that’s not that good. So, if you want to have something delicious and, at the same time, healthy and with some stock or whatever, you can just prepare this soup and enjoy it. Well, to be honest, it’s more of a cream-soup or something like that, because it’s kind of thick, too, because of the ingredients.

Ingredients:

  • Milk, 1 litre
  • Sour-cream, 150 grams
  • Cottage cheese, 150 grams
  • Matsoni, 200 grams
  • Eggs, 2 medium
  • 1 tablespoon all-purpose flour
  • Butter, 50 grams
  • Onions, 3 medium
  • Rice, 80 grams
  • Some water
  • Salt to taste
  • Green onions, fresh
  • Fennel, fresh

Preparation process

So, the preparation process starts with preparing those onions and cooking them. You should take a large saucepan and put the butter in it, well, of course, you can substitute butter with oil or even some margarine or whatever you want. You should chop the onions and put them into the saucepan and cook them until they get golden in colour and while cooking, you can add some salt to them, too, and that’s basically what I usually do, because that way the onions get more tasty and the dish will have a taste long before it’s done and ready to be eaten.

So, you need some cooked rice and you can cook it in another saucepan. The rice is not much, so that you can just put it into a small saucepan with water, that is double the amount of the rice and bring the water to a boil and cook the rice for some time, until it absorbs the water. And that you can do until you prepare the onions, if you want to, because that way you will already have the rice prepared when you start cooking the onions, I guess and that way you will not have wasted any time in cooking the rice and waiting and stuff like that, if you want to know the truth. Or you can just add some water to the onions in that saucepan and add the rice to it, too and cook them together for a while, I mean, until the rice is all cooked and ready, of course.

Well, after the onions are ready, you can start thinking about the rice. And as I’ve already mentioned, there are two ways of preparing the rice _ or the next step, as I call it, and you can choose either of them. Well, my friend’s sister had the rice cooked beforehand, while I prepared this dish with just cooking those onions in the saucepan and when they got ready and golden and everything, I just poured in some boiling water and add the  raw rice to it and cook them until the rice absorbed the water and got a little ready, because then I could add other ingredients and let it cook for a while and if the rice was not ready enough, it would still get cooked and it would get ready in the process. Well, it can be a problem, when the rice is plenty, I mean, when you are preparing a dish, where you need rice mostly and there’s this plenty amount of rice and you just have to cook all of it, it can take quite some time, however, if you are just cooking this small amount of rice, like 100 grams or so, it can be cooked pretty quickly and without any effort at all, if you ask me.

Anyways, in a couple of seconds, the rice was also ready and it didn’t have all the water absorbed, if you want to know the truth, however, that was not a problem at all and now I could add the other ingredients.

Well, I want to tell you about this Matsoni. First of all, you should know, that if you don’t have Matsoni and you can’t buy it anywhere or something like that, you can substitute it with some Greek yoghurt or you can just skip it and add some more cottage cheese or sour cream to the dish, however, as it’s called “Matsoni soup” you kind of expect it to have Matsoni, of course, so that it’s good to have matsoni in it, you know. However, as you already understood, this dish doesn’t constitute with just matsoni and you should not judge it by the name, as it’s mostly prepared from milk, you know, the stock is from the milk mostly, so that I would call this dish a dairy products’ soupor something like that, I guess.

So, what about all those other ingredients?! Of course, you should add all of them to the dish, I mean, you can just take that cottage cheese and sour cream and matsoni and mix them well together in a separate bowl and then add the eggs and whisk them. And then you can add some milk to the mixture, too and mix all of them together. Or you can just mix cottage cheese and sour cream and matsoni together and add them to the saucepan whisking it at the same time and then add those eggs while whisking, of course, and after that you can add the milk. However, that’s kind of hard way to do it, I guess, and what I did was to mix everything together with some of the milk in a separate bowl and then I added that mixture to the saucepan, where the onions and rice and a little bit of stock were and I was whisking the whole time while adding the mixture to the saucepan. That way you will just combine everything together in a couple of seconds without any worries, I mean, when cracking those eggs, you can just have something put into the saucepan or maybe the egg is bitter and you can’t really undo that thing after adding it to the saucepan, of course, so that, you should always remember to crack the eggs in another bowl and only after that you can add them to the mixtures or whatever you have there! And you can add the flourwhile whisking the mixture, so that it will kind of dissolve and not stay as balls or something like that.

Anyways, after all those things, there are just these herbs left to be added and some people like to add them almost when the dish is all cooked and stuff like that, however, it’s better if you add them earlier to this dish, because that way they omit their taste even more and the dish becomes more delicious, if you ask me. So that, you can have the prepared even before you do everything, I mean, you can just wash them with those onions and all they need after that is chopping basically. Well, the green onions need to be kind of peeled, too, I mean, you should get rid of those ends, which they have in the white end, I mean, the one that is in the ground and, of course, you should wash them thoroughly and then you can just chop them in small parts or however you like, because some people like them chopped very thinly and some like them to be long in  pieces, so that it’s all up to you. And, besides, if you don’t love herbs in your dishes, you can just skip that part and not add them to the dish at all. However, I still recommend adding some celery to the dish, because its taste is very good and it gives the dish its specific taste, if you ask me. And, you know, some people hate when there are onions in their dish, I mean, the onions, that we cooked at the beginning and though they give the dish its taste, they just can’t stand them having in the dish, so that I want you to know, that you can skip that part, too, I mean, if you want to have this soup, but don’t want to have those onions in it, then you can just have the other ingredients and prepare the soup without onions, it will still be delicious if you season it welland everything, you know. So that, it’s not that big of a deal if you don’t want to add some onions. The thing is, that the milk gives its taste to the dish, too, and I don’t know how to describe it, it has some distinguished taste in general, which I liked so much. And it all changed my associations of Matsoni soup, because I always thought that this soup would be some kind of sour thing with thick consistency and that I wouldn’t like it.

Well, after chopping the fresh green onions and celery, you should add them to the saucepan and you should also add the remaining milk to the saucepan and bring everything to a boil, after which, the dish is ready and you can taste it, of course. And, well, until you decide that the dish is ready, you should taste it to see if it lacks anything. Well, this time you should check for the salt, I guess, because if it lacks salt, then you might add some. And it won’t be needing anything else to be checked, I guess.

You should also consider the ingredients. I mean , some people would like their dish to be thicker and more of a cream-soup and then they might add the rice. And they might even add more flour, however, I really don’t recommend it, because then you can have a very thick dish and you may not like that, if you want to know the truth.

Well, that was about the Matsoni soup and how to prepare it. I really like that dish and my father and even my mother liked the dish when I prepared it, so that, you can really enjoy eating it, if you ask me. Maybe it’s not a very cheap dish, because the dairy products doesn’t cost cheap, however, it’s not something, that you can’t buy and, besides, it’s really easy to prepare and you can prepare it very quickly and it’s delicious and worth preparing, in general. So that it’s a great thing to have at home from time to time.
