The introduction

Hello everyone, I hope that you are all doing just fine!

In this article I want to tell you about this other recipe, which is a pretty good one, if you love pound cakes that taste like coffee. So, this is a coffee pound cake with some other stuff.

You know, there are many recipes of pound cakes and I really love baking the pound cakes and each time I bake them, I have a different recipe, so that it’s kind of always experiments, however, if you don’t try some new things, you will get bored with just one thing, if you ask me.

So that, lets hear about this coffee pound cake!

Ingredients:

  • All purpose flour, 250-300 grams;
  • Instant coffee, 2 teaspoons;
  • White granulated sugar, 200 grams;
  • Honey, 2 tablespoons;
  • Baking soda, 1 teaspoon;
  • Walnuts, 100 grams;
  • Raisins or some other dried fruit, 100 grams;
  • Pinch of salt;
  • Sugar powder;
  • Vegetable oil, 3 tablespoons.

Preparation process:

  1. First of all, you should prepare the coffee. You should boil some water and take 250 ml of it and add the 2 tablespoons of instant coffee powder to it and stir.
  2. Then, you should pour that hot coffee into a bowl and add the white granulated sugar and honey and a pinch of salt ad mix them well together. After that, you should put it aside and let the mixture get cold.
  3. Meanwhile, while waiting the coffee mixture to get cold, you should ground the walnuts or just chop or slice them into very small pieces. Well, I usually do that in my chopper-blender, which is a great thing for that. It just chops the walnuts, and if you let it, it can kind of grind the walnuts, too.
  4. Then, you should mix the ground walnuts and raisins or dried fruits, add them about 1 tablespoon of all purpose flour and mix them well. Maybe you will mix them with your hands, that way it will be very well mixed.
  5. When the instant coffee mixture cools down on room temperature, you should add the baking soda to it.
  6. In the meantime, you can take the all-purpose flour and add it to the coffee mixture little by little while mixing them together. For that you can even use the standing mixer and have it turned on and mixing while you add the flour to the coffee mixture.
  7. You can also add the walnuts and raisins or dried fruits mixture to the coffee mixture with the flour. And you should also add the oil to the mixture. You know, adding oil makes the cake be spongy and light.
  8. After you have added everything, you should have all of them mixed together very well. You will see, that the dough will become bubbly, that’s because of the baking soda and the chemical reaction.
  9. You should keep adding the all-purpose flour to the mixture while the mixer mixing everything.
  10. After all the mixing, you should have a slightly thick dough before you.
  11. Then, you should leave the dough like that for 20 minutes or so.
  12. In the meantime, you can grease the baking form with some oil. And you can even sprinkle some flour on it, however, I just use to grease the baking form with some oil and that’s it.
  13. Then, you can pour the dough mixture into the baking form and have a lid on it and put it into the oven and have it like that on 180 degrees Celsius for about 60-80 minutes.

To be honest, I usually have the pound cakes baked into my convection oven and after one hour they are really cooked and ready to be taken out.

When the pound cake is ready, you can take it out and have some sugar powder sprinkled on top of it.

You should remember, that sometimes it’s not that easy to take the pound cake out of the baking form, because it’s kind of soft and spongy. However, you can help it a little bit with some wooden stick or silicon stick or something like that and have the margins separated from the walls of the baking form. That way, it can become easier to take the pound cake out of the baking form, or you can beat it a little bit from the outside. That’s what I usually do. Or you can wait a little bit, until the cake gets colder, so that it can become not as soft, but a little bit harder, so that it can become easier for you to take the cake out.

Actually, you can have some toppings on your pound cake, which I find pretty interesting. I really love having some chocolate glaze over the top of the pound cake, because it gives the cake a better look and, besides, it’s more delicious, when you have a chocolate glaze on top of something. You can just buy those chocolate glaze packages in the supermarket and have the chocolate glaze poured on your pound cake.
