Cocoa pound cake

The introduction

Hello everyone, I hope, that you are all doing just fine!

In this article I want to tell you about my other recipe, which I prepared the other day. It’s a pound cake, but it’s not something very fancy. It’s very easy to prepare and, besides, it’s really a delicious one, though it doesn’t have too many ingredients in it.

Well, I’ve been preparing these kinds of pound cakes for quite some time now and this is another one of them, however, all of them have been different, because I’ve been preparing them differently. So let me tell you about this cocoa pound cake and the recipe.

Ingredients:

  • Eggs, 2 small;
  • Matsoni, ½ cup;
  • White granulated sugar, ¾ cup;
  • Baking soda, 1 teaspoon;
  • Cocoa powder;
  • Oil, 2 tablespoons;
  • Fitness cornflakes with dried fruit;
  • Chocolate pieces;
  • Vanilla;
  • All purpose flour, 1 cup;
  • Butter cookies, ½ cup.

Preparation process:

So the preparation process is pretty easy.

  • First of all, you have to beat the eggs and add the white granulated sugar to them and mix them well together.
  • When they are mixed well, you can add the matsoni and it you don’t have one, you can replace it with kefir or sour cream or even cottage cheese. You can even have some mayonnaise in the dough, however, I haven’t tried it. Anyways, you add some dairy and then you add one teaspoon of baking soda to the dough and mix those things together. I usually use my chopper-blender. It’s really easy to mix all those ingredients in there and, besides, it’s just the volume of the dough, so that it’s a perfect thing for mixing everything there.
  • After that, you can add some oil, because it’s really necessary and while some people use unsalted butter or margarine, I usually use oil, because it gives the cake its characteristic consistency.
  • Then I usually add some cinnamon and vanilla. And I add lots of cocoa powder to the dough.

  • I also added the butter cookies and I had this Fitness cornflakes bought the other day, which also contained some raisins and dried fruit and I thought, that it would be a good thing to add them to the dough and so that I did that.
  • Well, I also added some flour, until the consistency of the dough was kind of thick, but not very thick, of course.
  • I also had these chocolate pieces, which my sister bought in Italy and it’s a really tasty thing, so that I added some of it to the dough, too.
  • Well, now that everything was mixed and done very well, all I had to do was to put the dough into that baking pan and bake the cake. To be honest, I didn’t really expect that the cake would be very fancy, because I didn’t add any walnuts or nuts to it or some chocolate chips, which make the cake taste really delicious and fancy, however, it was still okay.

  • I have this pound cake baking tray, which is a pretty good one and it was in the box with the convection oven, which we bought last year, so that I’ve been using it pretty often and it has been a very good thing for me since then, because I prepare almost everything in there and it’s fast and without any oil sprinkled anywhere on the walls near the stove and there’s no smell in the room and, well, everything is just as it should be. Just for the information, this convection oven doesn’t even cost much, so that, I really recommend it to anyone, especially those, who don’t really love cooking and stuff. You can just take one frozen thing out, for example, chicken fillet and put it into the convection oven and that’s it, it will be ready in half an hour or so, it depends on the temperature and the size of the fillet.
  • Well, anyways, I took this pound cake baking thing and greased it with oil and then I poured my cake dough into it so that the dough would be all over the baking form. Then I put the lid on it and put it on a low rack into the convection oven on 50 minutes on 180 degrees Celsius.
  • After those 50 minutes, the convection oven was off and after some time I went to check the cake. The cake was pretty well-baked and it went out of the baking form pretty easily, so that it was not a problem to take it out as it happens sometimes, if you want to know the truth.

  • So that, after taking out the cake, it didn’t really look great, so that I decided to have it decorated with some chocolate glaze, and, besides, it would make the cake more delicious. actually, that chocolate glaze is always a good idea, so that I decided to have it poured on my cocoa pound cake.
  • Well, you just need some cocoa powder and sugar and water and that’s it. However, of course, there can be some other ingredients, such as vanilla and milk or butter. Technically, you can replace water with milk, however, I usually prepare the chocolate glaze with water.

  • So, you can take 4 tablespoons of cocoa powder, 2 tablespoons of white granulated sugar, 4 tablespoons of water and some vanilla and have them in a small bowl and put it on a gas and wait until the water boils. When the water boils you can just keep stirring and after a couple of minutes you can add some unsalted butter or margarine. You can even add some chocolate if you have, because that makes the chocolate glaze even more chocolaty. So, you can have it like that for a couple of minutes. I wanted the chocolate glaze to be pretty thick, so that’s why I had it boiling for quite some time and then, when it reached the desired consistency I turned the gas off and I knew, that I had to pour it on the pound cake at once, because it would get solid pretty fast, so that I poured it onto my cocoa pound cake and it became really pretty. And, besides, I had some coconut flakes and I sprinkled them on top, too, so that it would be really beautiful when you looked at it.

So that was the recipe for my cocoa pound cake. It tasted pretty delicious and I recommend you trying it too, because it’s simple, it doesn’t need too many ingredients and it’s really lovely and people will love it when you serve it.
