The introduction

Hello everyone, I hope that you are all doing just fine.

In this article I want to tell you about my other recipe and I prepared this dish the other day, when I just really wanted to have some pound cake for my mascarpone filling and that was because I had eaten that filling with some biscuits and it tasted very delicious and now I wanted to taste something like that again, too, so that i decided to have some pound cake baked for that and, well, it would be a great pound cake for everything and I could serve any guests, too, because there may have been some guests there at my home later that day, I guess. Well, it was a pretty good idea to bake that pound cake, if you ask me, because you have to eat something like that once in a while and treat yourself with a dessert, which is good and not that something that just has these ingredients and doesn't taste good at all and you have to eat it, because you just bought it and feel sorry for the dessert to throw it away. You know, that feeling is not good, because when you get that kind of feeling, you can not really shake it away and it's like you eat many things, which is not good for you just because of that feeling, you know. It's pretty bad and you should try to shake it anyways, of course, however, I don't always do that, I mean, I'm not really able to do that, I guess.

Anyways, I have prepared many pound cakes so far, if you want to know the truth. Well, not that many of them, however, it's still plenty, because I have never prepared pound cakes untiil just recently and it's all because of that halogen oven, which we bought some time ago. It's just a perfect thing for almost everything, if you ask me and I do really recommend it to everyone and especiallly those ones, who don't really love cooking or are lazy to cook or don't know how to cook things. Yes, even them! So, you can easily bakethosepoundcakes in that halogen oven and not worry aboutanythinng at all, I mean, you can just pour that mixture into that baking form and put it into the oven and turn it on one hour and 175 degrees Celsius and that's it, you don't reallly need to do anything else. And, well, I think, that everyone will agree, that it's really avery simple thing, because one doesn't simply bake a cake without too much effort and stuff like that and with this method, you can get one hour to do something else, which you wouldn't have if you didn't have that halogen oven, you know.

Anyways, I didn't really have had in mind to prepare this pound cake, however, when I woke up and saw some things in the kitchen and I also had some ingredients in the fridge and everything was just under control, I decided to prepare this pound cake, and, besides, I already mentioned above, that I had this mascarpone filling prepared the day before and it would taste great if I had some biscuits for itand I found that pound cake to be a great match for my mascarpone filling. So that, II started preparing this pound cake and, I guess, it was just a couple of minutes, that i needed for the mixture to get ready for pouring it into thebaking form and putting this whole thing into the halogen oven.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup white granulated sugar
  • 3/4 cup chocolate chips
  • 1/2 cup roasted peanuts
  • 2 eggs, medium
  • 3/4 cups oil or unsalted butter melted
  • 1/2 cup sour-cream
  • 1/2 cup cottage cheese
  • 1/2 cup mascarpone
  • 1 tsp baking soda
  • cocoa powder

Preparation process

so, the preparation process was pretty simple and easy and it didn't need much time for the mixture to be prepared. I don't know, that's maybe because I got kind of experienced in preparing that mixture or it's really easy, however, you can prepare it in just a couple of minutes and that's really cool, if you ask me, because that's onne of the things, why I can prepare that pound cake with pleasure, because it doesn't need much time and ingredients and effort and nerves and worrying and stuff like that and, besides, it's reallly delicious and when it's finished and you taste it, it really tastes good and you get this great feeling of pride and you are happy, that you baked a good pound cake, you know. So, I really recommend buying this halogen oven, because it's a very good thing for cooking everything easily.

Well, first of all, I needed some sugar and butter to mix together. Actually, this time I used oil to bake this cake and not the butter, however, if you are using butter, you should first melt it and then add the sugar to it and other ingredients, you know. Well, I had this half a cup of oil poured into my mixture, however, then i realised, thqt it wouldn't be enough, so that I added some of it, too. And it was pretty good, then, if you want to know the truth. And that oil was already liquidy, so that it didn't need melting and stuff like that and I didn't waste my time on melting some butter and waiting for it to get cooler. And that was the main thing why I used the oil and not butter, because I realised that I had butter in the freezer and it would be pretty hard to take the amount of butter that I needed at that time and then it would need to be melted and everything and it was just easier to use oil in that pound cake mixture, and, besides, I have heard, that they usually use oil in pound cakes so that the cake will be more fluffy and soft.

So, I had this oil and sugar mixed together in my standing mixer and then I added two eggs, one at a time. And it's not good to beat the eggs into the bowl directly, because then you can get the pieces of shell sprinkled into the mixture or the egg may be bitter and you can have the whole mixture become bad and you won't be able to use it for baking your cake. Of course, that's really bad, because you will be disappointed and frustrated and, perhaps you don't have any ingredients to prepare the mixture again and that will just be it and you won't be able to prepare the cake that you wanted.

Well, after beating those eggs into another bowl and adding them then to the mixture and mixing them well together, I took some sour cream and cottage cheese and mixed them together and added a teaspoon of baking soda and mixed them. You know, people add some drops of vinegar to the baking soda and it gets all foamy and stuff, because it gets into some chemical reaction and then they put that teaspoon into the sour cream or matsoni or whatever they are using as dairy product and then they stir and then they add it to the mixture in the mixing bowl. I usually do that, too, however, you can just use baking soda, too, it won’t be a mistake or something like that.

So, I had this baking soda dissolved into that sour cream and cottage cheese mixture, and I poured it into the mixing bowl, where it all got mixed to those other ingredients and then I had this cocoa powder added to the mixture, so that it all would become chocolate tasty and I had that in mind, of course, that the pound cake would be all chocolaty and stuff like that, you know. So that I added plenty of cocoa powder. Then I added a cup of flour and when I mixed those ingredients together, I understood, that the ingredients were to be added, because the dough was kind of thick and it should have been not that thick, so that I added some mascarpone and oil and I’ve mentioned that about oil above. So, after I mixed those things, I added roasted peanuts and chocolate chips to my mixture. And I also had some sour chocolate, which I had made the other day and I added 4 of them, too, and it was a pretty good idea, if you want to know the truth. I was also thinking of adding some raisins to the mixture, however, then I decided, that I wouldn’t add them to it and so that it was ready to be in the baking form and baked.

Well, I turned my halogen oven and preheated it while I was spreading some oil into baking form and pouring the mixture into it. It was a great process, if you ask me, because the dough was going down into the baking form and stuff like that, you know. I kind of flattened it with a silicone spatula and put the lid on the baking form and put it into the halogen oven on 175 degrees Celsius.

So, my chocolate peanut pound cake got ready in 45 minutesor so and it really was looking beautiful, because it was filled with those melted chocolate chips and it was cracked in some places just like pound cakes are cracked and I just knew, that it would be a great one when I tasted it. However, until that, I had these decorations for my pound cake, I mean, I wanted it to be even more beautiful until I cut it, you know.

Well, my idea was to sprinkle some coconut flakes on the pound cake, however, it wouldn’t be wise to just sprinkle those coconut flakes, because they wouldn’t stick on the cake and they would fall and then it wouldn’t have any purpose of doing that, if you ask me. So that, I had this chocolate condensed milk and I just sprinkled it on the cake on some sides and then I just sprinkled the coconut flakes on it, so that they would stick on it and wouldn’t fall here and there when cut and it would be nice to look at. And, well, the cake looked gorgeous and then I could cut it, because everyone was there and waiting for it to be cut.

The taste was really good, I mean, the consistency was just like pound cake should have and the amount of chocolate chips was just enough and they were melted in it and they made its taste really great, and the peanuts were great, too, however, the walnuts are better for cakes, I guess. And it was not very sweet, you know, and that was one of the main points for me, because I didn’t really want the cake to be very sweet and stuff like that. So that, it was just great and, of course, I could add some more ingredients to make it even better, or prepare some glaze, however, I didn’t really have much time for those things in that moment and that was what I did and I’m really satisfied with my pound cake, if you want to know the truth.

Anyways, people liked it and if you don’t really like much sweet stuff, then this pound cake is just for you, because it isn’t very sweet and it’s just a really light thing to eat for the dessert. However, if you want it to be sweeter, you can always add some more sugar into the dough, or prepare some sweet glaze and pour it onto the prepared cake, or you can have some sweet cream filling prepared and spread it on the cake or its pieces. There are many different variations about how to eat this pound cake, I guess. Well, to be honest, it would really make it taste better if you had some cream filling with it and that’s why I prepared it in the first place _ because I had some mascarpone filling made the day before, so that when I had this pound cake cut, I had this piece of it eaten with that mascarpone filling and it was just perfect, if you want to know the truth, so that I was pretty much satisfied with everything and I didn’t even waste much time on preparing it, so that, I really recommend you preparing this pound cake if you like cocoa and chocolate and peanuts and want to have something delicious and easy to make at home.
