Chocolate Cherry Truffle
The introduction
Hello everyone, I hope that you are all doing just fine.
In this article I want to tell you about this Cherry Truffle cake and the recipe of it prepared by me.
Cherry Truffle is one of those cakes, which I have bought in this bakery called Dolce Vita and liked very much and, well, after some time, I decided to have it prepared myself, I mean, it’s not that difficult to assemble a cake if you can bake it, and if you don’t really know how to bake some biscuits, that’s not even a problem, I mean, you can always go out there and buy those biscuits and assemble the cake yourself, so that it will be just as you wish that it should be.
Well, this Dolce Vita is a place, where all those cakes are prepared and sold and it’s a very popular place in Tbilisi and though it only has this one branch, people go there from all over the city just to order some cakes for birthdays or special occasions and take them with them and things like that and it’s pretty cool to have this kind of popularity, if you ask me, and I always wonder, why they don’t open another branch somewhere else other than Varketili, because people really want to have it somewhere nearby them, you know, and they always ask the same question: “aren’t you going to open a new branch somewhere else?” and I don’t really know the answer to that, if you want to know the truth, however, I hope, that they will open a new branch soon somewhere else in the city. However, I’m not really worried about that, you know, because it’s just nearby my home and I can go there whenever I want , because it’s like a 15 minutes walk from my homethere and it’s really easy to get there by car or a bus or whatever. And it’s just nearby the metro station and it’s pretty easy to access Dolce Vita bakery, if you want to know the truth.
Anyways, they have these amazing cakes and once, when I was visiting them, I saw this chocolate cake with some red things in it and when I asked, they said, that it was a chocolate cake with some cherries and walnuts and berries and I bought it and when we tasted it, it tasted very delicious and, at the same time, it was very light and easy to eat and it didn’t make you feel heavy after eating it, so that we really liked it and we would buy that cake when we wanted to have some light dessert. So, when I went there the other day, they didn’t have that exact one, however, they had this chocolate cherry truffle, which looked like it, though this one had just cherries and it didn’t have any of those berries, if you want to know the truth.
So, I decided to have it tasted, too, and I was sure, that it would be delicious and I was not wrong, you know, and when we tasted it, it was just great and that cherry taste was all over the cake and it made the cake taste really delicious, I mean, it gave the cake a little bit of this sour taste, which made the cake pretty light and enjoyable. And that was when I decided to have it prepared myself, I mean, I knew the ingredients and the taste, of course, so that I could prepare it. However, I really didn’t know the exact ingredients, because they don’t have it written on those shelves in front of those cakes as they have in some supermarkets and that is pretty bad, I must say, because then you have to ask those consultants about those cakes and I like to know what they have inside until I buy them, of course, because if I buy them and don’t know what they are made of and then I find out, that they have something, that I don’t like or if I’m allergic to it, then it’s just a waste of money, of course, and if I’m allergic and I eat it, then it’s just horrible, you know. So that you should always ask about the cake and what it’s made of and everything and some consultants just hate it when you are asking them something and I don’t like those people and sometimes I even leave that shop when they are not doing what they are supposed to do, I mean, their job is to be in service of the customers and they should listen and explain and not just sell the products, if you want to know the truth and some of them just want to give that cake to the customer and move on to the next one and that’s not really a good thing, if you ask me.
That’s what happened the other day, when I was shopping for some cakes and I had a pretty hard time deciding which one to take, because they didn’t have the one, that I wanted and since I was there, I decided to take some other cakes instead of that and I didn’t want to spend my money on something, that I wouldn’t like, so that I decided to ask the consultant girl about the cakes and she wouldn’t really listen and she thought that I wanted that piece of cake and started packing it and stuff like that and didn’t even let me finish what I was saying. Well, that was pretty rude and I couldn’t really shop there the way I wanted. However, I still bought some of those cakes, which I thought, that they would be kind of what I would like, though there was this other cake, which I was pretty interested in and when I asked her, she didn’t exactly give me an answer, I mean, she could just have told me what type of cream filling it had, because the cream filling is very important for me and when I buy cakes, I always ask about it and there are certain types of cream fillings, which I don’t’ really love to eat and if the cake has it inside, I would rather buy some other cake, than that particular one.
Anyways, that was when I decided to prepare this chocolate cherry truffle myself and I even googled it and there were some similar cakes in the Internet and I read those recipes, too, and, well, it was time for the preparation. However, I had a hard time deciding, which choice I could make, I mean, I could bake the biscuit myself or I could buy it somewhere, though I didn’t know a place, where they had a chocolate biscuit and in that Pasazhi shopping center, which is above the Station Square metro stationand which I have written about in my other articles, they have thiss plain vanilla biscuits and they are not chocolate, however, if I didn’t want to bake the biscuit myself, I would have to go there and buy it, and since I was not really sure, that I would bake a good biscuit, I decided to buy that vanilla biscuit there, because I would just waste my time and those ingredients and effort and everything in baking a biscuit if it didn’t come out just as planned and I would be disappointed, of course. And, besides, I didn’t even had a baking form for the biscuit baking and I would have to buy it , too, however, I have been planning on buying it for already quite some time now, but I still haven’t bought it, as you might have guessed.
Well, I went to this Pasazhi shopping center and went straight to the end of it, where they have all those biscuits and tarts and tubes and many other things sold and I chose the smallest biscuit there, because their smallest biscuit is pretty large, if you want to know the truth, and it would be more than enough for us to eat it. It cost just 5 Laris and I was pretty happy with my shopping there, because now I didn’t have to worry about some biscuit baking and stuff like that, you know. And I could just focus on that cream filling and decorations and other stuff after that, so I would just have to buy some other ingredients for my cake and that would be it, I mean, the decorations wouldn’t be much difficult to do and it would just mean, that I would have to decide how to decorate it and how much cocoa powder I would use in my cream filling and how I would prepare the cream filling, because I know some different methods of preparing the cream fillings, and I couldn’t really understand what type of cream filling they used in that cake, if you want to know the truth.
Well, anyways, I still decided to have my cream filling used in that cake, because I knew, that this cream filling would be delicious and since I have had much experience in preparing it, it would be a good idea, if you ask me. So that I decided not to use that whipping cream, that they use in all those cakes, and I think, that this cake had that whipping cream inside as the cream filling, you know, however, I’m not really sure about that and that’s why I decided to have the other cream filling in there. Besides, this whipping cream filling has this fluffy consistency or whatever and it kind of gives you that strange feeling after eating it and I don’t really like that, if you want to know the truth. However, many people use it in the cream fillings and it’s pretty popular these days. And I must say, that it’s good for decorating cakes, because the consistency that it has gives you the ability to easily decorate your cakes on the tops or whatever and it stays just like that and it gets that shape that you want it to have. And these whipping creams are pretty good in colourings, I mean, you can prepare them and colour them in different colours and they will look just amazing and that’s why they are great in decorating the cakes. However, if you want your cream fillings to have some great taste, then you should leave the whipping creams aside and prepare this cream filling, which I’m going to write about and which I’ve been preparing every time I want to have some cream filling and which my aunt has been preparing for a long time and it was her, who taught me how to prepare this cream filling, if you want to know the truth and I pretty much love that cream filling and I can eat it just without anything elseand sometimes we even have it prepared and put it into some can or container and have it in the fridge and we can take it out whenever we want and use it or eat it or whatever, and, well, basically it’s for me stored in the fridge and I eat it from time to time when I want to have some cream filling, and you can prepare it in different tastes, it’s really up to you and you can have some different essences in it and have it stored like that, so that you will have plenty of choices whenever you will feel like eating some cream fillings, if you want to know the truth.
Ingredients:
- Water, 1 litre
- 2 cups all-purpose flour
- 2 cups white granulated sugar
- 1 egg
- 100 grams unsalted butter
- Cocoa powder
- 1 tablespoon white granulated sugar
- 4 tablespoon water
- Canned cherries
- 2 tablespoons white granulated sugar
- 2 tablespoons cocoa powder
- 4 tablespoons water
Preparation process
So, the preparation process begins with baking the biscuit, of course, however, as I’ve already bought the biscuit, it was not necessary to bake it then, of course, and I just had to start preparing the cream filling.
Well, for the cream filling, I decided to have that porridge prepared, however, this time I would use some water instead of milk, because I wanted the cream filling to be lighter and milk makes it kind of heavy, if you ask me. So, this would be a simple cream filling. And would need 1 litre water to be boiled for that and I had it boiled in my electric kettle, so that it would boil fast. When it boiled, I poured it into the saucepan and let it be on a medium gas heat while I mixed the flour and sugar together and I took some water from that boiling water and poured it on the flour and sugar mixture and mixed them well together and then I also added one egg and mixed them well and then poured that mixture into that boiling water and stirred. It needed something like a half an hour or so for the porridge to be done and get cooked and you should know, that it needed stirring occasionally, because otherwise it would get stuck on the bottom of the saucepan and it would get burned and everything and it would taste bad after that, you know. So that you should stir it from time to time.
Well, when the porridge was perfectly thick and ready to be set aside, I took the saucepan out of the gas and let it be like that for a while, then I took the porridge out and put it into a bowl and put it into the fridge, so that it would get cold quickly and I wouldn’t have to wait for it to get cold, you know. And in the meantime, I had this butter put in the mixing bowl and started the mixer for the butter to get mixed and get fluffy and whiter and things like that. I had that butter on a room temperature, of course, so that it would be easier for it to get mixed by the mixer and, well, they usually have that butter in the room temperature when they want to prepare something, you know. Anyways, I turned the mixer off when the butter got whiter in colour and got fluffy and soft. And after some time, the porridge was already cool and it was ready to be mixed with the butter.
You know, the porridge should be kind of the same temperature as the butter, so that they will be mixed well together. So, as I took the porridge out, I had it added to the butter little by little and I had the mixer on and it continued mixing while I added these things. When it was all mixed, I added some vanilla and a little bit of vodka and then I added the cocoa powder to the cream filling, so that everything would be like in that cake, which I had bought the other day. And I would have to prepare the biscuit myself, if I wanted to have the exact cake, I guess, however, as I’ve already told you, I was not sure, that I would prepare the good biscuit, and that’s why I bought it, however, itt would have been great if the biscuit was prepared with cocoa powderand it would have that good taste, which I like, though the vanilla biscuit was not that bad either.
Well, the cream filling was done and I had to prepare the biscuit now and by that I mean, that I would have to prepare this syrup to sprinkle on the biscuit. I had this biscuit cut into three pieces, because I don’t like when there’s much biscuit pieces and less cream filling, and I wanted the biscuit pieces to be kind of soft and that’s why I prepared this syrup, so that I would sprinkle it and it would get softer. I took 1 tablespoon of sugar and 4 tablespoons of water and had it together in a small heatproof bowl and had it on a medium heat and stirred occasionally and had it like that for a couple of minutes, until it got kind of thick and until it had this syrup look. Then I could add some coffee to it, if I wanted to, but I chose not to add anything and let it be like that and just sprinkle it on the biscuit.
So, cutting the biscuit was not that easy, because you have to cut it straight and if you can’t cut it just right, it would be a problem when spreading the cream filling and stuff like that, trust me, I know that. So, I cut it with a knife a little bit around and then I had this thread and I just slowly had it moved here and there and finally it was cut. And I had those three pieces of that biscuit and I sprinkled some of that syrup on them and then I could spread the cream filling on them. However, I had one thing left to do _ I had to prepare those cherries , of course, because the main thing here were the cherries, you know. Well, they didn’t really need much of a preparation, I mean, I had them bought canned and they were pretty much prepared, they could be eaten already, so that I just took them out and had them ready.
You know, I wanted my cake to have that great taste of cherries,so that I had plenty of them in every layer and I would have them even more, if I could, though there was not any space left there, if you want to know the truth. I even thought, that I would have some walnuts in one layer, however, then I changed my mind and I just decided the cake to be with cherries only.
So, I took the first layer of the biscuit and spread the cream filling on it and then I had these cherries added to it and then I put another piece of the biscuit and spread the cream filling and cherries and then I had the third layer and spread the cream filling and then I had that cream filling spread all around the cake, too, and it looked just great. Then I could decorate the cake, of course and I decided to have some chocolate glaze poured on top of it, so that I prepared the chocolate glaze. I took 2 tablespoons of white granulated sugar and 2 tablespoons of cocoa powder and 4 tablespoons of water and some chocolate chips and I had them mixed together and had them on a medium heat and boiled and after a couple of minutes of boiling, when it got a little bit thicker, I took it out and let it cool a little and then I poured it onto the top of the cake and I had some cherries put on the center of the cake and that was pretty much it, the cake was officially done and it just needed some time to get all blended and stuff like that and then I would cut it and taste it and I really looked forward to doing that, if you want to know the truth.
Well, I hope, that my chocolate cherry truffle cake recipe was something interesting and that you will use it to prepare this cake and I hope, that you will like it. Well, to be honest, everything with those cherries would taste great, because the cherries give the cakes a special taste and they become pretty light to eat. So that you don’t feel any discomfort or heaviness in your stomach after eating it, you know, and that’s what I like about those fruit cakes.
