Chicken Caeser salad recipe
Okay, now let's make some Caesar salad.
First of all, many people think that the name is connected to the famous Roman Caesar _ Gaius Julius Caesar. "Ave Caesar!" But no, the name is not connected to him. And neither is the salad itself.
Well, its creator was Caesar Cardini. He was an Italian immigrant, who operated restaurants in Mexico and the United States. His daughter Rosa said, that her father invented the dish after the Fourth of July 1924 rush depleted the kitchen's supplies. Cardini had collected what he had and made something from them. It's like how pizza was made, guys! The very first documentation of the Caesar Salad is from 1946. That was when Dorothy Kilgallen _ the newspaper columnist _ wrote about the salad: "The big food rage in Hollywood — the Caesar salad — will be introduced to New Yorkers by Gilmore's Steak House. It's an intricate concoction that takes ages to prepare and contains (zowie!) lots of garlic, raw or slightly coddled eggs, croutons, romaine, anchovies, parmeasan [sic] cheese, olive oil, vinegar and plenty of black pepper."
The salad is a salad of romaine lettuce and croutons dressed with parmesan cheese, lemon juice, olive oil, egg, Worcestershire sauce, anchovies, garlic, and black pepper.
You may think or know, that the Caesar Salad is made of chicken, and, for some people, chicken pieces may by the most important ingredient in this salad and they can not really imagine the Caesar Salad without chicken, but guess what, the original salad did not contain any chicken or any meat or fish or whatever. It was just those lettuce and coddled eggs and cheese and croutons mainly. Salads with chicken and stuff like that are just one of so many variations of the Caesar Salad, that you can not even count, I guess.
So, first things first, in order to have a great and delicious Caesar Salad, you must have a great dressing. Nowadays there are many companies and stuff like that, which offer you prepared and ready Caesar dressings. To be honest, I have not tried them, but I guess, they would not be that bad, and maybe it is even better to have that already prepared dressing to pour onto the salad and don't really bother preparing it yourself. Well, that's for people who don't have enough time or just don't want to prepare the dressing themselves or just don't like their prepared dressing and prefer one that is made by others with the exact amounts of ingredients that it needs.
Now, I have more than one Caesar Salad recipe. Personally, I'm fond of the Chicken Caesar Salad, and so this will be a recipe of it.
Now, for this recipe I don't really use the Caesar dressing that is commonly used, I just use mayonnaise and mix other things in it, but I will tell you how to do the proper Caesar Salad dressing, so don't worry about that, if you want to use the original or whasoever proper dressing for your salad, you will find it out soon.
Ingredients:
- about 200 grams of bread, preferrably ciabatta
- 3-4 tbs extra virgin olive oil
- 5-6 chicken fillets
- 2-3 large cos or romaine lettuce
- 1/3 cup of lemon juice (2 large lemons)
- 1/3 cup of mayonnaise
- 1/3 cup grated Parmesan cheese
- garlic to taste
- salt to taste
- black pepper to taste
First of all, we need to cook chicken fillets. So, take those fillets and put them in a saucepan filled with water and let it boil. When it boils you should remove the scum and let it boil for about half an hour.
While the fillets are being cooked, you can prepare some other things. You can prepare some bread. So, take this bread and cut them into small pieces and put them in an oiled pan and put it in the oven for about 10 or 15 minutes, until they are crisp. But I usually don't do that. Instead I buy prepared Caesar bread or I buy those Kubeti packs and they are very delicious in this salad.
Meanwhile, you can wash the lettuce very carefully and then cut them into pieces with your hands or just chop them or something like that. I personally like when they are not very big pieces, so I usually cut them with knife and they are something like 2 centimetres in width or even less.
Now about that dressing! I usually take some mayonnaise and add some garlic and lemon juice to it, then mix it and the dressing is ready and it really tastes good, so you make the tasty dressing without much effort. You can add some cheese to it, too, but I usually have all my cheese at the top of the dish and that makes it really beautiful.
When the fillets are ready, you can cut them into smaller pieces and I usually cut them into really small pieces, because I don't like when there are almost the whole fillets in the salad. And when you cut them, put them in a pan with oil and kind of fry them, so that they will have a better taste.
Now all you have to do is put all that stuff together. I usually put some lettuce first, then add bread, fillets, dressing and then I repeat it until everything is out. On top I have lettuce and then I have my cheese on it.
Chicken Caesar salad is just so delicious you will want to have it all the time!
