Hello everyone, I hope that you are all doing just fine!

In this article I want to tell you about this other recipe, which is a pretty good one, though it’s a cheesecake and I know that some people don’t really like cheesecakes because they are not like the classic cakes. Well, to be honest, I didn’t really think that cheesecakes were worth tasting, however, then I tasted a blueberry cheesecake once, and I must say that cheesecakes are not that simple cakes, which can be for everyone. However, they need to be baked or prepared by someone professional in preparing cheesecakes, because if you don’t prepare the cheesecake just the way it should be prepared, then it will be a waste of time and money and all those ingredients and you will just be left with nothing at all.

So I’m sure that you all have heard about cheesecakes and there are many different variations of preparing cheesecakes, which all are very good for some people and some don’t really like them. There are those cheesecakes which everyone loves and there are those which just some of the people like and eat them.

Well, anyways, it’s not something unusual or very fancy, though people think that cheesecakes are very fancy cakes and that they can’t afford them or something like that. It’s not like that and, well, preparing some cheesecakes can be a little tricky, however, they are not very difficult to prepare and they are not very expensive, though the cream cheese, which is the ingredient for most of the cheesecakes, can cost a little more than expected.

So let me tell you about the preparation of this cheesecake with cherry.

Ingredients:

  • Sour cream, 350 grams;
  • Cottage cheese, 125 grams;
  • Lemon zest, 1 teaspoon;
  • Eggs, 3 medium;
  • Brown sugar, 100 grams;
  • Cinnamon, ¾ teaspoon;
  • Cherry liqueur, 1/3 tablespoon;
  • Cherries, 750 grams;
  • Cookies, 300 grams;
  • Butter, 50 grams.

Preparation process:

The preparation process is not that difficult and you don’t need much time to prepare this cheesecake, though on the first time, you might find it a little bit tricky. However, then when you just get to know the recipe, it will get easier to prepare this cheesecake.

  1. First of all, you should prepare the dough for the cheesecake, which can be with just some cookies and butter. You can take any cookie you want to and you should then have it in the chopper and chop them very well. My chopper blender does that job pretty good and I recommend you buying that kind of chopper blender, which is a great thing in many occasions.
  2. Well, when you have blended or chopped the cookies, you should add some butter to them and mix them together and you should have the mixture put into the baking pan, which can then be separated into pieces and then you will need just the bottom for the cake to be taken out.
  3. You should have this mixture put into the baking pan and have it all spread all over the bottom and a little bit on the walls of that baking pan and you can have it put in the refrigerator for about half an hour or so, or you can put it into the oven and have it baked for some time, however, I prefer having it in the refrigerator, if you want to know the truth.

In the meantime, you should prepare the filling for this cheesecake and it’s really easy to do that.

  1. Well, you can take a bowl and have that sour cream and cottage cheese mixed together, or you can just place them into the chopper blender and mix them together in there.
  2. After that, you can separate the egg yolks from the egg whites and have the egg yolks added to the mixture with the brown sugar and mix them well.
  3. You need the lemon zest, too, and I usually have a fresh lemon bought and I shred it on the shredder and that way I get this fresh lemon zest and not the bought one in the supermarket, which is pretty old, if you want to know the truth.
  4. When you have mixed everything well, you can add some cinnamon and cherry liqueur to the mixture and mix them all together very well in that chopper- blender.
  5. After that, you can take the baking pan with that cookies mixture in it and have the sour cream mixture poured onto it, so that it covers every bit of it very well.
  6. When you have placed everything, you can just take the baking pan and preheat the oven on 190 degrees Celsius and then have the baking pan put into the oven for about 40 minutes, until the top of the cake gets a little bit golden in colour, and that’s why you should check the cake from time to time, so that it won’t get burned or something like that.
  7. In the meantime, you can take the cherry stones from the cherries themselves and have them ready for the cheesecake. You can add them on top of the cheesecake when it’s still baking and when there’s just a couple of minutes left until it’s all baked, or you can just add them when you take the cheesecake out of the oven.
  8. When the cake is cooked and ready, you should put it into the refrigerator and have it like that for some hours, just like you do it with the tiramisu cake, because it usually is very delicious after some time and not just right after being baked, so that you should have it set aside for a couple of hours, if you want it to taste really good.
  9. After those couple of hours, you can take the walls of that baking pan and have the cheesecake served.
