The introduction

Hello everyone, I hope, that you are all doing just fine, and this is my continuation of the other article about beans and preparing them.

Well, there were two types of beans, that I prepared that other day, however, I have only written about one and now I want to tell you about this other dish made from beans that I prepared and this is a pretty good dish, too, I mean, this one is like a salad and it’s really good if you are having some guests and you want to serve them well and if you want to have some great appetizers or something like that, you know, it’s just really efficient and reasonable, and, well, at the same time, very delicious thing to have on a table. However, it’s not recommended to have plenty of beans eaten at once, because then the stomach gets all full and stuff like that and, trust me, that’s really not that good of a feeling neither for you, nor for the others.

You know, there was this girl with us, who just came from Germany to Georgia and people took her to sightsee the city and showed her many places and historical stuff and some things, that you should really see in Tbilisi and well, of course, they took her to Mtskheta, where there are so many historical sites, including the main one, which is the Svetitskhoveli Cathedral and that is really beautiful, if you want to know the truth,  and, also, there’s this Mtskheta Salobie, where people usually hang out after visiting Mtskheta or before that, so that they just invited this girl to Mtskheta Salobie, too, of course, and the usual thing, that you should definitely taste in Mtskheta Salobie is this  beans dish with Mtchadi, which is called “Lobio Kotanshi”, so that she tasted the dish and it was so delicious, that she couldn’t really stop eating it, as you might have heard, so, she was not used to that, I guess, and, besides, no one is really used to eating much beans, so that she felt pretty bad after that, if you want to know the truth. I mean, she had this bloating and stuff like that, of course and some discomfort in her stomach and that’s just ruining your mood and day, you know, because you have this bad feeling all over.

Well, to tell you the truth, people love beans in Georgia very much. You know they use beans in everything in Mexico and it’s like almost the same in Georgia, too, I guess. Well, not that same, but still… though, people in Georgia mostly love dishes with stock and the beans soup is pretty popular all around the country, however, they prepare salads, too, and those salads are really delicious, too, if you want to know the truth.

You know, there’s this thing, when someone dies, they have Kelekhi and this is a Supra (or a feast, kind of) for that person and there are many people gathered and they have all those dishes and stuff and they are like seeing off this dead person to that other side and people are drinking and eating and stuff like that and one of the main dishes there is this Lobio, which, I think, is prepared with tomato sauce and, well, I must say, that it’s very delicious. It’s so delicious, that people actually love it and look forward to eating it during that time. To tell you the truth, I haven’t seen that Lobio being prepared, otherwise I would write an article about it, too. I’m really interested in how to prepare it, though, because it’s really necessary to know the preparation process. Sometimes I just really want to eat that kind of Lobio and I just don’t really know, how to prepare it and that’s kind of sad, if you ask me. Well, you know, tomato sauce goes well with almost everything and it’s great with Lobio, too, so I guess, that Lobio has some tomato sauce and that’s why it’s so delicious.

Well, now about these two dishes prepared with beans and how they are done.

You know, these dishes are like more of a salad type, so that they are really good for serving them to your guests and they are pretty delicious, of course, so that if you are having some guests over, you can prepare them, while you won’t have to spend much money on those dishes and they will like them very much, too, if you want to know the truth. However, it all depends on how you will prepare it, of course. Though, if you add those things wisely and stuff like that, those dishes will taste pretty delicious, I can say.

Well, the main thing is still in the type of the beans, I guess, because some have this special taste and are very delicious even if you don’t add any spices at all and if you just season it with salt. You know, maybe even seasoning can be more than enough because the beans could be so tasty, however, seasoning them gives them very good taste and, well, I don’t think, that salt is something that you should not add to anything. The dishes need at least a pinch of salt so that they can have a taste of something good, if you ask me. There are these red beans, that are pretty cheap and, at the same time, they are really delicious when cooked, to my opinion. And, I think , that they get cooked not very quickly, but in a normal way, so that I would recommend buying them for cooking. However, it has been quite some time that I haven’t bought those ones and we had these white and red ones, they call it Dedofala here in Georgia. My aunt recommended it to me because it gets cooked pretty quickly and , at the same time, is pretty much delicious. I also saw these white beans, which looked pretty cool, however, I haven’t yet bought them, but I want to taste them as I haven’t tasted them ever and they looked pretty interesting. I also wondered about the black beans, because as I know they are the most benefiting ones and rich in vitamins and everything, however, I haven’t seen them in the supermarkets here, or, maybe I haven’t paid much attention to those beans and maybe I missed them somewhere. Well, if you decide preparing beans, remember, that the black ones are really great and if there are black beans in that supermarket where you are choosing which beans to prepare, just buy the black ones, trust me!

Ingredients:

  • Red beans, 400 grams
  • Fresh coriander, 50 grams
  • Fresh parsley, 50 grams
  • Bay leaf, ground
  • Black pepper, ground
  • 3-5 tbs oil
  • 4 medium onions
  • Salt to taste
  • Vinegar to taste

Preparation process #1

So, this one, that my aunt prepares is kind of different in a way, that it has some parsley and vinegar, too. It’s called Lobio Kirkazhi, and the main thing here is oil, I guess, because it’s what’s the difference is between this one and other beans salads. As I know, this beans recipe is about the beans getting cooked in some water, I mean, the usual cooking stuff, like putting beans into a saucepan and adding some water and boiling for a couple of hours, until the beans are cooked. However, they shouldn’t be overcooked or something, I mean, they shouldn’t fall apart and they should be the whole ones , if you want to know the truth. Well, that’s the tricky part for me, because I don’t know whether it’s me or the beans, but I usually don’t have those whole beans at the end of the process. Well, I mean, of course, there are the majority of them the whole ones, but still, there are many others split and stuff like that and I just hate when that happens. I don’t know, how people cook those beans so that the beans stay whole.

Well, after cooking the beans, you take them out without the stock and have them get colder. Until that, you should slice those onions like rings and chop those coriander and parsley and set them aside. You should have some oil with that bay leaf and black pepper and then you should add those herbs and onions and some drops of vinegar to it and then added those beans to it and mix them well together. You know, I recommend having some olive oil instead of that plain oil, because then the olive oil will give some special taste to the dish in general and it will be more delicious, if you ask me. Though, some people don’t really love olive oil and its taste is not tasty at all for them, so that you should consider that. However, I think, they will love having some olive oil in that dish, too. Although, I haven’t prepared this exact recipe myself, but as my aunt has it prepared from time to time, I really want to tell you, that it’s really good and you should try it. And, besides, it’s really easy to prepare after that cooking stuff. You know, there are these Lavashi sold at the supermarkets, which cost just 1.20 Laris or so and they are pretty delicious and they can be used in almost everything, I guess, so that you can buy them and wrap that beans salad into them and have them like that. You can even have some salad leaves and tomatoes or ground beef cooked and wrapped with those beans together in that Lavashi, that will be just great, if you want to know the truth. And you can have them like that or you can put that wrap into a frying pan and cook itand eat it like that, that way it’s just amazing, trust me. It will be kind of like Tacos, which I just love and I wanted to prepare them, but I didn’t have some time to prepare it yet. Well, I am planning on preparing them, of course, and then, I will write an article about it, too. Until then, I would like you to have this recipe and try it out and try preparing it and you will like it, believe me. It’s like, having some beans and imagination, you can do miracles! There are so many  recipes prepared from beans, that you can’t really know all of them, I guess and that’s why I have these many recipes about beans, if you want to know the truth.

The preparation process #2

You know, my mother likes this beans’ dish, which doesn’t have stock and there are just these beans alone with some onions and herbs and she used to prepare that one when we were children and to tell you the truth, I didn’t really like that dish because of the onions, I guess. Well, you might wonder, what I have against these onions, and I will tell you , that I hate that smell when you have from mouth when you eat the raw onions!

Anyways, these beans were taken out of their stock after they were kind of cooked, I mean, they weren’t supposed to be fallen apart, they were supposed to be kept as whole ones and not like beaten ones, however, when I cook some beans, they usually don’t stay like that and I always wonder why, because people prepare beans and they are all cooked and stuff and , at the same time, they are whole ones in comparison to mine. Maybe it’s in the type of beans, I don’t know. so, you should consider that thing, when preparing beans in this way. I guess, you should buy those small red beans, I think, they are prepared pretty easily and, besides, they cost cheap and they are normal in size. I use to prepare those beans, which are half white and half red and when they are prepared they get bigger in size and they become pretty huge, if you want to know the truth, so that if I have them plenty in my saucepan, it just fills with those large beans and it’s like there’s no space for something else in the saucepan, I mean, for the stock or something like that.

Anyways, you have to cook that beans so that they stay whole and then you can take them out of their stock and put them into a bowl, which is pretty large, because the beans will be much, I guess, and you need some space for mixing those beans with some other things, too. So, you know, these beans need some roasting, too, however, some people don’t roast them and just put them into a bowl and add some seasoning and onions and spices and mayonnaise. Well, that’s how my mother used to prepare those beans. She used to take those beans out of their stock and then she would slice some onions like rings and she would season those beans with some salt and add some ground coriander and thyme and add some mayonnaise to the dish and it was just perfect and ready and everyone loved that dish, if you want to know the truth.

The other one, and, which I made this time, is with just oil instead of the mayonnaise and some cooked chopped onions and chopped coriander. My aunt prepares that one very well and mine is not the same as hers.

Well, this was what I wanted to tell you about the beans and how I prepared those dishes to be served. They were pretty delicious, if you want to know the truth and, well, they didn’t last long because of that, of course. So, I hope, that you will find these dishes intriguing and easy to prepare, besides, they are really tasty and worth preparing. What’s more, beans are good for our health and one should have them every once in a while and if one knows how to prepare beans, it’s really good for them and, besides, it’s a very cheap meal, if you want to know the truth and pretty nourishing, so that, you can have plenty of it in a small amount of money. You should really consider that and remember, that you can prepare many things from beans and, besides, you can have beans soup or just beans alone and you can have them as you like, I mean, it’s like having potatoes _ there are so many recipes of preparing potatoes and they are pretty cheap, too, and kind of benefitable, I mean, they contain potassium and it’s an important element for our body.
