Apple and carrot cake - no eggs

Source

Ingredients:

  • 600g flour;
  • 300g sugar;
  • 1 tablespoon of baking powder;
  • 200g butter;
  • 480g of warm water;
  • 120g finely grated carrots;
  • 5 apples coarsely chopped;
  • 1 tablespoon cinnamon.

Preparation:

  1. Combine all ingredients in a bowl except the apple, mix well.
  2. Grease a pan with butter and place the apple.
  3. Pour in the prepared pan and bake until cooked through.
  4. Unmold and serve while still warm.

Remarks:

A cake without eggs. Several times I make this kind of cakes and never disappointed me...

The base is made with the first ingredients, then just add the carrot or chocolate, honey and walnuts, lemon, orange, vanilla, basically what you like best. Just replace the carrot 120g per 100g chocolate or honey, or add citrus zest.

Apple-flavored cake

Ingredients:

  • 8 eggs;
  • 2 cups of sugar;
  • 4 cups flour;
  • 2 tablespoons of baking;
  • 1 cup milk;
  • 1/2 cup of oil;
  • 8 medium apples diced;
  • Cinnamon to taste;
  • Ginger to taste;
  • Cardamom to taste.

Preparation:

  1. Beat eggs with sugar.
  2. Add the flour and baking spices.
  3. Gradually add the milk and then the oil.
  4. Add the apples and wrap.
  5. Grease a big mold with butter and line the base with greaseproof paper.
  6. Pour the batter and bake, test with toothpick because the cake will be dry, except that the center should be half cooked half raw.

Remarks:

This cake is simply delicious, although it took a long time to bake a cake for which it is well worth the wait, if only for the delicious smell that vai scenting the house during cooking.

It's a great cake for a snack with friends or family...

Apple cherrie pie

Ingredients:

Pastry:

  • 6 tablespoons of flour;
  • 1 tablespoon of oil;
  • 2 tablespoon of sugar;
  • Half a cup of warm water.

Filling:

  • Applesauce;
  • 5 apples;
  • Cherries q. b.

Preparation:

  1. Mix all ingredients of the pastry until the dough does not stick to hands, if necessary add water little by little.
  2. Stretch the dough and place it on the special form.
  3. Arrange the jam, sliced apple and cherries.
  4. With the leftover dough decorate the pie.
  5. Bake until the pastry is crisp.

Remarks:

Here I leave a delicious pie and looking simply tempting.

You can choose to put cherries in syrup instead of candied, or use pastry puff or even purchase.

Carrot applesauce

Ingredients:

  • 1 kg of apples;
  • 1 kg of carrots;
  • 1 kg of sugar;
  • 1 cinnamon stick.

Preparation:

  1. Peel the apples and carrots and cut them into pieces.
  2. Add the sugar.
  3. Let stand for a bit.
  4. When sugar is dissolved, put the mixture to boil and simmer.
  5. When the fruit is nearly undone mash, add the cinnamon stick and cook better.
  6. Esterlize bottles to put the jam.

Remarks:

I saw this in a jam cookbook of my mother. Already did it twice and it is always fantastic... Compote is great to eat with some crackers, drinking amazing tea.

Applesauce

Ingredients:

  • 1 kg of apples;
  • 500g sugar;
  • 2 cinnamon sticks.

Preparation:

  1. Peel apples and cut them into pieces.
  2. Add sugar and cinnamon.
  3. Let stand for a bit.
  4. When sugar is dissolved, put mixture to boil and simmer.
  5. When the apple is almost undone, remove the cinnamon sticks and grind, then let it cook better.
  6. Esterlize bottles to put the jam.

Remarks:

This jam is a real temptation of the gods... Love in on toast, in pies, in pastries, crepes and whatever.

Rustic apple cake

This was the cake I made for a friend of Spain. It's not a pretty cake, not too elaborate, but it is super delicious...

Ingredients:

  • 5 eggs;
  • 100g brown sugar;
  • 130g of white sugar;
  • 250g flour;
  • 1 teaspoon of bicarbonate;
  • 1 tablespoon of baking powder;
  • 1 teaspoon of cardamom;
  • 70 ml of oil;
  • Chopped walnuts q. b.;
  • Chopped hazelnuts q. b.;
  • 1. 5 apples to small cubes;
  • 2 apple for coverage.

Preparation:

  1. Beat eggs with sugar.
  2. Add the powdered ingredients.
  3. Add the pieces of apples, nuts and oil, mixing well.
  4. Line a form with parchment paper and arrange the dough.
  5. Cut two apples into slices and decorate the cake.
  6. Sprinkle with chopped hazelnuts and cardomomo.
  7. Return to oven to bake.
  8. When almost cooked brush the cake with jelly.

Remarks:

This cake is delicious and cardamom gives you a super special taste. If you do not have or do not like, replace it with cinnamon or even fennel.

Chocolate crumble

Ingredients:

  • 4 apples;
  • 2 pears;
  • 100 g of oat flakes;
  • 100g margarine;
  • 70 g sugar;
  • 1 tablespoon cocoa;
  • 2 tablespoons all-purpose flour.

Preparation:

  1. Grind the oat flakes until half flour, half small flakes.
  2. Add flour, sugar, cocoa and margarine, softened.
  3. Mix well with your fingers until a paste is not very homogeneous.
  4. Peel the apples and pears and cut into cubes.
  5. Sprinkle the fruit with a little sugar.
  6. Place the crumble on top and put in a hot oven for 30 minutes or until the crumble being crunchy.

Remarks:

It's a dessert that can be served both warm and cold. I advise warm with a scoop of ice cream. It's really good, but cold is also a delight.

Baked apple in the microwave

Ingredients:

  • Apples;
  • A spoonful of sugar for the apple;
  • Ground cinnamon;
  • Water.

Preparation:

  1. Remove the apple seeds or else make some blows with a knife or fork around the apple.
  2. Sprinkle with sugar, cinnamon and a tablespoon or two of water.
  3. Bake in microwave about 5 minutes.
  4. Let cool slightly and serve.

Remarks:

I love baked apple, but usually only when I just want to eat it at lunch or dinner, the oven is too slow and I want to eat it soon. The microwave is the solution - quickly and as good as in an oven.

Instead of water you can put Porto wine (traditional Portuguese wine). If you like nuts can add some nuts or raisins, it's simply delicious.

Apple pie

Ingredients:

  • 1 base of puff pastry;
  • 7 tablespoons pastry cream;
  • 7 tablespoons sugar;
  • 16 tablespoons of water;
  • 2. 5 golden apples;
  • Apple jelly.

Preparation:

  1. Place the base of puff pastry on a fluted pie tin.
  2. In a bowl put the spoons of sugar, pastry cream and cold water, mix well until smooth and homogeneous
  3. Put the prepared mixture over the puff pastry and decorate with sliced apple.
  4. Bake until the pastry is cooked.
  5. Brush with apple jelly.

Remarks:

This pie is divine, equal or even better than the purchased one because the pastry is crispy. Now talking about the cream... it's delicious, easy to prepare and so tasty... It gives a very special touch to this pie. So fantastic! Love it.

Apple and walnut cookies

Ingredients:

  • 80 grams of dried apples, thinly sliced (I put a little less);
  • 50 grams of walnuts (I added a few more grams of hazelnut and almond);
  • 75 grams of butter (I used plant-based);
  • 120 grams yellow sugar;
  • 1 pinch of salt;
  • 1/2 teaspoon cinnamon;
  • 1 egg;
  • 75 grams of rolled oats;
  • 120 grams spelt flour (I used wheat);
  • 1/2 teaspoon baking powder.

Preparation:

  1. Place all ingredients in a bowl, except for the nuts and apple.
  2. Mix well until homogeneous.
  3. Add the apple into small pieces and nuts also cut.
  4. Wrap small cookies and bake for about 15 minutes.

Remarks:

I make dehydrated apple at home.

I cut thin slices of apple with peel and seed spread and put the slices on a tray. Then put the pan on top of the oven while doing something else. After finishing the temperature changed to 70 °C and the tray placed inside the oven about 1 hour. I removed the tray and placed outdoors in the kitchen the other day were great to consume.

We have to take into account that the apple greatly reduces their weight, as I was in a hurry I have to dehydrated more apple.

Apple pancakes

Source

Ingredients:

  • 3 apples coarsely grated (I used home-new);
  • 1 egg;
  • 1 cup milk;
  • 3 tablespoons butter, softened;
  • 1 1/2 cup flour;
  • 2 tablespoons of baking powder;
  • 1/4 teaspoon of cinnamon;
  • 1/8 teaspoon of nutmeg;
  • 2 tablespoons brown sugar (I used honey).

Preparation:

  1. Beat the egg with the milk and butter.
  2. Add the grated apple.
  3. Add the remaining ingredients softly with a spoon.
  4. Place spoonfuls into the pan of crepes, spreading carefully. Please note that these pancakes are cooking on low heat, milder than the "normal".

Remarks:

I thought they are wonderful, but be careful with the nutmeg, you can end up putting more than you should. You must not pour directly from the bottle.

I serve with a spoonful of honey!

Apple marmalade/jelly/jam

Source

Ingredients:

  • 1 kg of peeled golden apples (they weigh more with skin, be careful);
  • 600 g of brown sugar;
  • 1 cinnamon stick;
  • 100 ml water.

Preparation:

  1. Peel the apples (do not discard the peel), cut them to pieces and put them in a saucepan with the sugar, water and cinnamon stick.
  2. Bring to a simmer for about 30 min.
  3. Grind everything and cook for another 10 or 15 min.
  4. Take a spoon for a sweet dish, let cool slightly and swipe your finger in the middle.
  5. See if the point is correct, pass the finger through jam, divided into two parts that do not join immediately, you got it!
  6. If you are at the point just put the jam into sterelized bottles.

Remarks:

In my case I filled two glass jars and a Tupperware I left in the kitchen, just covered with parchment paper to dry and become marmalade.

As for the apple peels can leverage to make jelly, which can then be used to glaze cakes or pies, giving them that glow. This recipe can be done whenever we make apple pie or crumble or something you use a lot of apple and left many shells.
