The beauty of Ciudad Guayana

Ciudad Guayana is a city formed of 2 towns: Puerto Ordaz and San Félix. It is situated in the south of the country and it has many places and restaurants with a variety of typical dishes, homemade desserts and drinks, typical of the area.

The city is surrounded by the biggest rivers in the country which are the Orinoco river and the Caroní river, whose fish are used in typical dishes, amongst them, el coporo, el lau lau, el morocoto, la sapoara, el rayao, y la curbinata. Also this city produces the famous Guyanese cheese, and other such items which are used in the preparation of the cuisine which are prepared by the loving Guyanese wives and professional chefs in the city.

A variety of products and recipes

In Guayana there there are a variety of products used in the preparation of the dishes, for example the fish from the river, beef and chicken, fruit and vegetable, as well as ingredients for the homemade desserts.

I have to mention that they use beans and rice in the preparation of the famous palo a pique, las cocadas, el papelon con limon y el carato de mango, which are traditional drinks.

It is a river fish that is fried, seasoned only with salt and lemon, and is accompanied with a tomato and onion salad with a little carrot and a piece of cheese and a tortilla or cassava bread.

Preparation of La Sapoara

In a clay pot, place 3 litres of water and boil the white vegetables, which should be cut into same size pieces. Add the herbs and the sweet pepper, which cannot go amiss. Add the onion and the garlic, which should be lightly fried. When the veg has been softened, add the sapoara (fish) which has also been cut into regular pieces. Leave it for 10 minutes and serve with cassava bread or tortilla.
