Cod in Almond Sauce

Hello, hello!

Today I'm not going to show you a place, today in my blog I'm going to write a recipe for you that, at Christmas, is a triumph at my house.

It's true that we like cod very much and cooked any way, but still... We love it!

At Christmas we always make a dish in which the protagonist is a fish. And this year it is: Cod in Almond Sauce.

What's in this ideal dish?

- Desalted cod loin.

- Toasted peeled almonds.

- Slice of Bread.

- Garlic.

- Saffron in Hebra.

- Onion.

- Crushed Tomato

- White Wine

- Olive Oil

- Salt

- Boiled Potatoes

I haven't put any exact amount, since it depends on the people who are going to eat it.

And... How do you prepare it?

Peel the garlic very finely; I always cut them into thin slices, but of course, do it to taste.

Brown them with two teaspoons of oil, and remove them from the heat. Don't let them burn!

In the same oil that we have fried the garlic, let's add the slice of bread and... let it brown! Once the bread is golden, remove it.

As we will notice, the oil will have disappeared, so we will need more to fry the almonds. So, a teaspoon of oil and the almonds until they are fried a little bit, and then take them out of the pan.

In the mortar, prepare crushed garlic, the slice of bread, part of the almonds and salt, but very little. Add a little wine and water, leave it to one side and then pour into the frying pan where we will sauté the peeled and chopped onion, and the chopped tomato, after about 10 minutes cooking, add the water and just stir.

Heat the oven to 180 - 200 degrees; put the cod on top of the prepared sauce to which, now, we will add a little more wine, and add the boiled potatoes.

After 20 minutes, or when we think it's almost finished, add the almonds we have left over. After 3 minutes or so, serve.

All that's left is... To enjoy this delicious dish and dip it in the sauce!
